Instant Pot Father’s Day Casserole
Happy Fathers Day to all you dads out there! Thank you for what you do. Fathers are so important and I know I would be completely lost without Greg in our home helping to raise our children. Why not celebrate dad by making him a delicious breakfast after he has slept in?
I was pleasantly surprised at how tasty this breakfast dish turned out! It only has 4 ingredients (minus salt and pepper). It starts with a layer of sausage patties, then a layer of scrambled eggs, a layer of sweet Hawaiian crescent rolls and finally a layer of cheddar cheese. With your Instant Pot and air fryer lid you can be enjoying this Father’s Day meal in no time. Greg took his portion down in 2 minutes flat and then came back for more. So it passes the dad test!
Ingredients/Substitution Ideas
- Eggs
- Kosher salt
- Pepper
- Fully cooked sausage patties–I buy these in the frozen food aisle. My kids love eating them for breakfast. Make sure to thaw these out first. I threw mine in microwave for 45 seconds.
- Pillsbury Sweet Hawaiian Crescent Rolls–these just added a slight sweetness to the dish which I loved! You can also use regular crescent roll dough. Make sure to buy the small package (only 8 ounces).
- Shredded cheddar cheese–or another type of cheese you enjoy.
Steps
- Scramble the eggs: In a bowl whisk the eggs, salt and pepper well.
- Prepare pip dish: Spray a pot-in-pot dish with non-stick cooking spray. I used my stainless steel 7 inch dish and lid.*
- Sausage: Cut each of the sausage patties into 4 pieces. Place the patties in a layer in the bottom of the pot-in-pot dish.
- Eggs: Pour the eggs over the top.
- Dough: Open the package of crescent rolls and unroll them to lay the dough flat over the top of egg mixture. Some portions of the dough will overlap but mostly it should be in one layer.
- Cover the pot-in-pot dish with a lid or foil.
- Pressure cook: Pour 1 ½ cups water into bottom of Instant Pot. Place the pot-in-pot dish on top of a trivet with handles. Lower the dish into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes. When time is up move valve to venting and remove the lid.
- Air fry to cook the dough all the way through: Remove the pot-in-pot dish and discard the water. Place the pot-in-pot dish back into the Instant Pot without the lid. Place air fryer lid on top of Instant Pot. Air fry at 300 degrees for 8 minutes (this lower temperature will help cook the dough all the way through but won’t burn the top of the crescent rolls). Sprinkle with cheese and air fry for 1 more minute.
- Serve: Slice and serve. Garnish with green onions if desired.
Notes/Tips
- Serve with a side of fruit like grapes, blueberries or strawberries. Or make it a full meal and serve with yogurt parfaits.
- I used my 6 quart duo crisp Instant Pot*. If you don’t have an air fryer lid then see the recipe card for instructions on how to make this in the oven.
- I used a metal trivet with handles* and a stainless steel pot in pot dish*.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
