Instant Pot Fat Burning Soup

Vegetables have so few calories and so many nutrients that they make a perfect addition to your diet if you’re striving to achieve a healthy weight and feel energetic. This soup is packed with vegetables. I love making this soup for lunches in the cold weather months. It helps me get in lots of veggies and I love eating something warm and comforting.

My kids, husband and I all loved this dump and go soup for dinner served with cheese toast. I’m going to have to make a second batch today for lunches!

Ingredients/Substitution Ideas

  • Celery
  • Carrots
  • Onion
  • Green pepper–or another color of bell pepper
  • Cabbage
  • Frozen cauliflower–or 1 small head of cauliflower, cut into florets
  • Beef broth–or vegetable broth
  • Tomato juice–or V8
  • Onion soup mix–or you can make your own from scratch
  • Worcestershire sauce
  • Black pepper

Steps

  1. Dump ingredients into Instant Pot: Add celery, carrots, onion, green pepper, cabbage, cauliflower, water, broth, tomato juice, onion soup mix and Worcestershire sauce to the Instant Pot.
  2. Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 15 minutes (if you don’t have a soup button just use the pressure cook button). When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  3. Serve: Stir and add in fresh cracked pepper to taste. Ladle into bowls and serve.

Notes/Tips

  • Serve with saltine crackers or whole wheat bread. This is the most amazing and easy to make whole wheat bread recipe. I make it every other week!
  • This soup can be whatever you want it to be. Feel free to add in green beans, corn, garlic, spinach, or kale.
  • If you want to add in some protein to this soup consider adding in a can of beans. You can also add in a couple cups of rotisserie chicken or browned ground turkey. One thing that I love is adding a big scoop of cottage cheese into my bowl. It sounds weird but it tastes really yummy!
  • You can make this recipe gluten-free if you use gluten-free Worcestershire sauce and onion soup mix.
  • This recipe can be dairy free if your onion soup mix is dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. Halve the recipe in a 3 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 5 ribs of celery, chopped
  • 3 large carrots, peeled and chopped
  • 1 onion, finely diced
  • 1 green pepper, cored and diced
  • 1/2 of a head of cabbage, cored and chopped
  • 1 (12 oz) package of frozen cauliflower (or 1 small head of cauliflower, cut into florets)
  • 1 cup water
  • 1 cup beef or vegetable broth
  • 4 cups tomato juice
  • 1 (1 oz) package of onion soup mix
  • 1 Tbsp Worcestershire sauce
  • Black pepper

Instructions

Instant Pot Instructions:

  1. Add celery, carrots, onion, green pepper, cabbage, cauliflower, water, broth, tomato juice, onion soup mix and Worcestershire sauce to the Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 15 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  3. Stir and add in fresh cracked pepper to taste. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Add celery, carrots, onion, green pepper, cabbage, cauliflower, water, broth, tomato juice, onion soup mix and Worcestershire sauce to the slow cooker.
  2. Cover and cook on low for 8 hours or on high for 4 hours.
  3. Stir and add in fresh cracked pepper to taste. Ladle into bowls and serve. 

Notes

For a lower sodium version of this recipe look for low sodium versions of beef broth, onion soup mix and tomato juice.

    Made the Instant Pot Fat Burning Soup. Only variation from recipe was one tablespoon of Better Than Bouillon Beef instead of broth…EXCELLENT! Soup is delicious and filling. I am a healthy type 2 diabetic. This soup is now a regular on my menu.
