Instant Pot St. Patty’s Day Corned Beef and Cabbage–tender sliced corned beef served with cabbage, red potatoes and carrots. Only 6 ingredients are needed to create this delicious one pot meal.
Instant Pot St. Patty’s Day Corned Beef and Cabbage
Top of the morning to you! If you’re looking for something EASY and delicious to make for St. Patrick’s Day I’ve got a great recipe for you. After making Instant Pot St. Patty’s Day Corned Beef and Cabbage I will never make corned beef in any other way again. The Instant Pot makes it so fast and easy. The corned beef turns out tender and sliceable. You need to try it!
You’ll start this recipe by placing a quartered onion and some broth into the bottom of the Instant Pot. Next you’ll rinse off the corned beef. It’s important to rinse the corned beef because the beef has been cured or “corned.” This is a pickling process that uses a lot of salt and spices to infuse the meat. There will be excess salt lingering on the surface of the brisket. By rinsing off the meat you’ll make sure it’s not too salty of a meal. Don’t worry because rinsing the brisket won’t make the beef taste bland! The flavor is infused deep into the beef during the curing process.
Next you’ll place a trivet in the bottom of the Instant Pot and place the rinsed corned beef on top (I had a trivet that came with my Instant Pot). You’ll pressure cook it for 70 minutes. 70 minutes will give you a tender but sliceable corned beef. While the corned beef is cooking you can prepare your potatoes, carrots and cabbage. After the corned beef has finished with a natural pressure release you can move it to a cutting board to rest. Pop the vegetables into Instant Pot and pressure cook for 3 minutes. Perfectly cooked vegetables that are seasoned well from the corned beef will come out of your pot. Slice up the corned beef thinly and serve with the vegetables and enjoy a wonderful meal!
What to do with leftover corned beef? Make a Rueben sandwich! Pile corned beef, Swiss cheese, sauerkraut, and Russian dressing on top of grilled slices of rye bread. Or try my Instant Pot Red Flannel Hash! It’s so good! You could also use corned beef in the place of smoked sausage in the Instant Pot campfire hash.

This comes out great! But this year I forgot to defrost my meat ahead of time. What happens if the meat is still frozen? Can I still put it like that in the IP? If so, for how long?
Thank you!
Karen says
I’m sure you can but you would need to increase cooking time by maybe 25 to 30 percent. How did it go?
Karin says
I was able to get it 1/2 thawed and adventured to cook it for 80 minutes. I got lucky since I was totally guessing. The luck of the leprechaun ☘️! 😂
It came out great, vegetables and all!!
Thank you!!!!
Karen says
yes! the luck of the leprechaun came through I love it 🙂
Linda says
Just made this recipe today to celebrate St Patty’s Day (a day early). It was super yummy! My day (who is part Irish 😊) loved it! The vegetables took on a great flavor from the beef and broth, and the corned beef was really soft. I had never made corned beef before, but I will definitely use this recipe again!
Karen says
So glad you enjoyed it Linda!
Kevin M says
Just curious why does this one say 70 minutes but your other recipe says 90 minutes roughly the same sized piece of corned beef?

Karen says
Lol i don’t know! I guess 90 minutes will be ultra fall apart tender and 70 minutes will be sliceable tender
Gary says
Do you add the carrots, cabbage and red potatoes on top of the trivet after cooking the corned beef? The recipe didn’t say for sure.
Karen says
yes that’s what I would do…some of them might fall through and that’s okay.
Karin says
Karen,
Thanks for the answer on the 8.60 lbs. cooking time:) it turned out amazing!!
Yes, we found that big one at a market that s as Lis sells to restaurants and it was on sale !!!! Perfect leftovers for sandwiches !!!
Karen says
Nice!
Karin says
Hi Karen,
I want to cook 8.60 pounds in the IP. How much time do I set it for ?
Thank you !!
Karen says
I would cook it for 90 minutes. I hope it will fit! That is big!
Laura says
Will this recipe work in my 3 quart Instant Pot?
Karen says
If the corned beef is small enough to fit then yes.
Robert says
Very tasty, made this tonight. Loved it!
Karen says
Thanks Robert! I am glad to hear it!
Mike says
I didn’t totally love the flavor the beef broth gave the corned beef, but I loved how easy this was, and the vegetables tasted great. If I did this again I would try a different liquid and cook the corned beef a bit longer so it’s a little more tender.
Karen says
Good to know. thanks for weighing in!
Louan Foldenauer says
This was the best corned beef and cabbage that I have ever made. When I would boil my dinner it was too soft, but when I made this recipe in my instapot I was able to slice the meat. We were very impressed with it.
Karen says
I know, right?! It’s the best!
Louan Foldenauer says
This is how i’m making my Corned beef and Cabbage from now on!
Tilford says
I have been cooking the cabbage in the same liquid the corned beef was cooked in and the cabbage turns brown after cooking for three minutes. The cabbage tastes o.k. but looks unappetizing. Should I remove all of the liquid except maybe one cup before cooking the vegetables? BTW, I usually cook a flat cut and a point cut at the same time for 90 minutes, always turns out delicious. Any advice would be appreciated.
Karen says
Yes you could totally take most of the liquid out and that would work well!
Kat says
I bought a set of steamer baskets for the Instant Pot at Walmart and I use them when I do the veggies. Remove most of the liquid and put the potatoes and carrots in the basket with the cabbage wedges lying on top. Works perfectly with no discoloration. Coincidentally, the steamer baskets work great cor making potatoes and eggs for potato salad in 4 minutes!
Lyndel Colman says
I would like to make enough for a larger group of 8. I have an 8 quart instant pot. How would I change the recipe? Thanks so much.
Karen says
I would just cook 2 corned beef briskets at the same time. Use same cooking time.
Lyndel Colman says
Thank you. I love your recipes. I can always trust them to be great!
Sharon Pastuszka says
I made this for my husband and myself for St. Patrick’s day. It was absolutely delicious! First time my making a delicious corned beef! Love your recipes!
Karen says
Oh I’m glad! Hopefully it becomes a tradition for you every March 17th!
Nancy says
Is there anyway you can notate in the recipe that it is in your cookbook?
Karen says
Yes I need to do that sorry. All the recipes after august 2020 should be new recipes that are not in the cookbook.
Nancy Sorrels says
Leftovers? You had leftovers? Maybe you mean the second brisket I cook while we eat the first. This is a family favorite and goes fast and my grandsons each have a hollow leg. My daughter and I have been known to hide various tidbits in dummy containers, shh don’t tell on us. Will follow your instructions on the next brisket I fix.
Karen says
Yes good plan with the dummy containers. Save the sour cream and cool whip containers for that!!
Nancy Sorrels says
Cottage cheese containers, neither of them would touch that. We also have a container that says liver pate, won’t even touch it to move it out of the way.
Karen says
Liver pate 🤣
CH says
Can I get the slow cooker version please?
Karen says

Jennie says
What changes should I make if I only want to make half of this recipe?
Thanks!
Karen says
Halve all the ingredients except the liquid and keep the same cooking time 🙂
Kat says
Do I need to add extra broth or time for a 4lb corned beef?
Shannon says
I had a 4lb brisket and I cooked for 90 minutes in my ninja foodi 8qt. It was done and easily lifted out to slice, but I like my corned beef falling apart. I could’ve added more time. I also used 4 cups of broth to cook my vegetables in and I cooked them for 4 minutes because I like very soft veggies, too.
Kathyrne Kuskie says
Thanks Shannon. This helps.
Shannon says
No problem
Karen says
Nope, same amount of broth
