Instant Pot “Everything” Chicken Casserole

Description

An easy dump and go chicken and rice dish flavored with “everything bagel” seasoning. 


Ingredients

Scale
  • 2 1/4 cups chicken broth or water and 2 teaspoons of better than bouillon
  • 1 1/2 cups converted or white rice
  • 1 Tbsp dried minced onion
  • 1 Tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 2 cups cooked, chopped chicken or 1 pound raw chicken cut into bite size pieces
  • 2 tsp Everything Bagel Seasoning
  • 4 ounces cream cheese or 1 (10.5 oz) can cream of chicken soup
  • 1/3 cup sour cream
  • 20 Ritz crackers, crushed
  • 2 Tbsp melted butter

Instructions

  1. Pour chicken broth into Instant Pot. Sprinkle in the rice. Add in the onion, lemon juice, worcestershire, chicken, everything bagel seasoning. Place the cream cheese on top of the chicken, don’t stir it in. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove lid. 
  3. Stir in the sour cream. 
  4. In a bowl, stir together the Ritz and the butter. Sprinkle a few shakes of Everything Bagel seasoning into the cracker mixture. Sprinkle the crackers over the rice and chicken. Place an air fryer lid on top and air fry for 3 minutes at 400 degrees or until topping is browned. (If you don’t have an air fryer lid you can scrape the rice and chicken mixture into a 9×9 inch pan and cover with the cracker mixture. Then bake in the oven at 350° F for 15 minutes). 
  5. Serve and enjoy!

Notes

Try adding in some steamed broccoli florets (or another vegetable like peas, spinach, etc.) when you stir in the sour cream.
