Instant Pot Company Potatoes–the best homemade cheesy hashbrown potato casserole with a crunchy cornflake topping.

Instant Pot Company Potatoes

Instant Pot Company Potatoes

These potatoes have many different names like funeral potatoes, party potatoes, hashbrown casserole and cheesy potatoes. Whatever your family calls them they are a Sunday dinner favorite! This version is the best I’ve ever tasted! I loved using the homemade cream of chicken soup (it only takes a few extra minutes!). It really added a homey element to the dish and I won’t make them any other way again.

You can make this recipe in the Instant Pot or the oven. I used my Duo Crisp Instant Pot with the air fryer lid to make this recipe. Don’t worry, if you don’t have an air fryer lid you can still make this recipe.

Ingredients

  • 1 pound frozen hash browns–don’t need to be thawed
  • 1 cup sour cream–I used full fat but reduced fat works fine
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup shredded sharp cheddar cheese–you can use another type of cheese like Colby Jack
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 batch homemade cream of chicken soup–or one can of Campbell’s cream of chicken soup or cream of mushroom soup
  • 1 cup crushed cornflakes–you can also use crushed Ritz crackers
  • 2 Tbsp melted butter

For the homemade cream of chicken soup:

  • 3 Tbsp flour
  • 6 tablespoons butter
  • 1 cup chicken broth–I used 1 cup water and 1 teaspoon of Better than Bouillon Chicken Base
  • 1 cup milk
  • Pinch of salt and white pepper–you can also use black pepper

Instructions

  1. Stir ingredients together: In a large bowl stir together the hashbrowns, sour cream, garlic powder, onion powder, half of the cheese, kosher salt, pepper and cream of chicken soup. Scrape the mixture into a pot-in-pot dish (I used a Fat Daddios 7 inch by 3 inch cake pan*). 
  2. Prepare Instant Pot: Pour 1 cup water into bottom of Instant Pot. Place the pot-in-pot dish on top of a sling/trivet and lower into the bottom of the Instant Pot. 
  3. Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes (if using homemade cream of chicken) or 25 minutes (if using canned cream of chicken).
  4. Quick release: When time is up move valve to venting and remove the lid after the pressure is released. Remove the pot-in-pot dish and set aside. Dump the water out of the bottom of the Instant Pot and dry it out.
  5. Brown up cornflake topping: Sprinkle the rest of the shredded cheese on top of the hashbrown mixture. Then sprinkle the cornflakes on top. Drizzle with the melted butter. Lower the pot-in-pot dish back into the bottom of the Instant Pot. Cover with the air fryer lid. Set the air fryer function to 400 degrees for 3-5 minutes. (If you don’t have an air fryer lid then place the pan in the oven under the broiler for 3-5 minutes). 
  6. Serve: Once cornflakes are browned up serve the potatoes and enjoy! If desired garnish with sliced green onions. 

How to make homemade cream of chicken

  1. In a saucepan melt 6 tablespoons of butter butter over medium heat. Sprinkle in 3 tablespoons of flour and whisk well. Stir in 1 cup of broth and 1 cup of milk. Whisk often until thickened.
  2. Stir in a pinch of salt and white pepper.
  3. Remove from heat and use in any recipe that calls for cream of chicken soup.

How to make the potatoes in the oven

You can also make these potatoes in the oven. Scrape the hashbrown mixture into a 8×8 inch casserole dish. Sprinkle the cornflakes and drizzle butter over the top. Bake at 350 degrees for 35 minutes (homemade cream of chicken) or 45 minutes (canned cream of chicken). 

How to store leftovers?

Store leftovers in an airtight container* in the refrigerator for up 5 days or in the freezer for up to 3 months.

What Goes With Company Potatoes?

These potatoes are a great side dish to almost any dinner. Often they are served with ham or turkey. Try serving alongside French onion pot roast or huli huli chicken.

Can I Sprinkle Something Else (Other Than Corn Flakes) Over The Top Of The Potatoes?

Yes you can! Try crushed potato chips, panko bread crumbs, crushed Ritz or saltine crackers, french fried onions, etc.

Can I use different potatoes?

This recipe uses frozen hashbrown potatoes. You can also use tater tots, frozen potato cubes or O’brien potatoes. If you want to use fresh potatoes you can cut them into cubes and partially cook them before going on with the recipe as written. You can partially cook the potatoes by placing them in a steamer basket with 1 cup of water in the Instant Pot. Then pressure cook the potatoes for only 2 minutes with a quick release.

Can I double this recipe?

If you choose to make this recipe in the oven you can double the recipe in a 13×9 inch pan. If you want to double the recipe in the Instant Pot you will need a very deep pot-in-pot dish such as a 3 quart liner* used inside a 6 or 8 quart liner.

Can I halve this recipe?

Yes you can. Halve all the ingredients and keep the same cooking time.

How to make this gluten free

To make this gluten free use arrowroot in the place of flour in the cream of chicken soup. Make sure the chicken broth is gluten free. Choose cornflakes that are specifically labeled as gluten free.

Oven directions: You can also make these potatoes in the oven. Scrape the mixture into a 8×8 inch baking dish. Sprinkle the cornflakes and drizzle butter over the top. Bake at 350 degrees for 35 minutes (homemade cream of chicken) or 45 minutes (canned cream of chicken).
