Instant Pot Chocolate Chip Muffin Bites

If you have a silicone egg bites mold* and are looking for a sweet way to use it try these Instant Pot chocolate chip muffin bites. These were a perfect snack for a quarantine afternoon. I made a double batch and my family inhaled most all of them within minutes.

Some tips for success:

  • Even though silicone bakeware says it’s non-stick you will still need a bit of non-stick cooking spray (like Pam) on the inside your egg bite mold. This will ensure that you can pop out the muffin bites with no issues of sticking. Don’t use a ton of the spray, just one quick 1/2 second of spray should work.
  • Fill each of the molds evenly. They’ll be about ¾ full. This will ensure that each muffin bite cooks evenly and are the same size.
  • Don’t quick release the muffin bites. They turn out fluffier with a 10-15 minute natural pressure release.
  • Remove the foil immediately after retrieving the bites from your Instant Pot. This prevents condensation from dripping on top of the bites and “sweating” of the bites. Don’t let them sit for much or any time at all before taking them out of the mold.
  • Chocolate chip muffin bites are best eaten warm.

Instant Pot Chocolate Chip Muffin Bites

Description

Love chocolate chip cookies and muffins? Try these Instant Pot Chocolate Chip Muffin Bites. They are a delightful snack or dessert that is perfectly poppable. A creative way to use your Instant Pot egg bites mold.


Ingredients

Scale
  • 1/3 cup brown sugar
  • 1/3 cup melted butter (5 tablespoons plus 1 teaspoon)
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 tsp baking powder
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 1/2 cup mini semi sweet chocolate chips

Instructions

  1. In a medium mixing bowl SLOWLY whisk the brown sugar, melted butter, vanilla and milk together for about 1 minute. Then with a wooden spoon SLOWLY stir in the baking powder, flour and salt until no white streaks remain. Fold in the chocolate chips. 
  2. Spray your silicone egg bites mold* with non stick cooking spray. Spoon the batter into each mold. They should be about ¾ full. Cover your egg bite mold with foil (or with the pressure cooker safe lid, if it came with one). 
  3. Pour 1 cup of water into the bottom of your Instant Pot. Place the egg bites mold on top of a trivet (I use this sling/trivet*) and lower into the bottom of the pot.  
  4. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes on high pressure. When time is up let the pot sit for 10-15 minutes and then move the valve to venting.
  5. Remove the lid and pull out the mold. Remove the foil. Place a plate on top of the egg molds. Then flip over the plate and the molds so that the muffin bites pop out on top of the plate. Gently push your thumb into silicone mold to pop out the bites. 
  6. Eat warm and enjoy!

Notes

I made this is my 6 Quart Nova* and my 8 Quart Lux*. Both took the same amount of time and both turned out exactly the same.

    Mine came out chewy as well as what others have said, like they just didn’t cook enough. I will try maybe 15 minutes and see if that makes a difference. They are just like super chewy and not done. Taste like raw dough.

    I came to read the reviews after I tried the recipe. I followed it exactly, but the texture is really odd. They look like steamed dough. I cooked them for 12 minutes and slow released for 15 minutes as suggested.
    I did use the lid that came with the mold instead of foil. I wonder if that made the difference?
    They taste a bit like raw cookie dough- not terrible, but not what I was going for. I hoped to replace the processed Little Bites muffins my kids like, and they aren’t going to be convinced.

    Mine also turned out gummy. I followed the recipe exactly as written.
    Super disappointing. Perhaps it should be taken down until this has been resolved? I didn’t read the comments prior and could have saved myself a lot of time.

    I just made these exactly as directed, and mine also came out undercooked.
    I used the blue silicone mould that came with my instant pot.
    They are good, but not sure how safe it is to eat since it is not fully cooked.
    My kids had planned to give these as a birthday gift to their cousin but we won’t be able to do that now 🙁

    Mine also came out gummy. I didn’t read the comments before trying. I tried to put them in for a second 12 minutes in the instant pot but it didn’t help. These are the mould’s I used.     Gummy? I’m assuming they are talking about underdone. did they VENT NATURALLY for the full 15min? If they forced vented before that it might be the reason the bites were under cooked.

    Mine turned out great. Not gummy at all! I used my Ninja Foodi Deluxe which is an 8qt. I used the same exact egg bite mold and orange sling from your links. I don’t think that should make much of a difference though? The only thing I did different from the recipe was used 1 1/2 cups of water because I have an 8qt. Other than that followed recipe to a T. Thank you so much Karen for sharing. I have tried most of your recipes and and they all come out tasty!

      I would be nervous to try this in the IP. If might turn out a weird texture. You can definitely use regular chocolate chips. If you do you’d defnitely need to increase the cooking time.

    Mine came out gummy too! Was there supposed to be an egg in there? If I would have read the reviews I wouldn’t have made them. This is the 1st of your recipes that didn’t turn out well. My husband says call then ‘chocolate chip dough balls’

        please why… oh why Karen, do you keep asking the same question about ‘which’ egg bite mold is being used … I think we all get it…. the silicone … but why ‘which’ , what do you mean and have you figured out the ‘gummy’ yet that other’s experience?     My little muffin bites are too gummy! Any thought on what I might have done wrong? I increased the cooking time to 14 minutes and didn’t release the pressure until 15 minutes.

      I don’t think so. The reason? They’ll bring the temperature of the batter down and affect the cooking time. If you do try it I would increase the cooking time by 3-4 minutes.

    Have you tried doing this with gluten free flour? I have had to go gluten free for a while because of my stomach but I absolutely love these!! I think this recipe would be amazing. Could you let me know? I am still trying to figure out all the ins and outs of the gluten free cans and can nots when it comes to baking and what helps breads rise and what doesn’t. It gets very confusing after cooking one way for over 40 years.

      I really don’t know because I am completely unfamiliar with gluten free flour. One guy told me he tried my churro bites with gluten free flour and they turned out. If you do try it let me know how it goes!

      I use bobs red mill gluten free 1 to 1 flour. They taste perfect. No substitutes other than butter for dairy free and milk
