Instant Pot Meatloaf Bites-–use your silicone egg bites mold to make the cutest, tastiest mini meatloaves ever. This recipe can be made with ground beef, turkey or chicken. You can even make baked potatoes at the same time in the same pot!

Instant Pot Meatloaf Bites

I recently purchased a silicone egg bite mold* to make Instant Pot egg bites. I knew that the mold could be used for other recipes and I’m so glad I came across an idea for mini meatloaves. This recipe is so tasty and my family all agreed that it was a keeper. The glaze on the meatloaf was so simple but just added a slight tang and the meatloaf was perfectly seasoned.

I really think you should buy an egg bite mold just for this recipe!! And if you don’t want to have yet another accessory I think you should make it as one big meatloaf using the method I used in my bacon bbq meatloaf recipe. One thing about this recipe is that it makes 7 mini meatloaf bites. We have 4 people in our family so we got almost 2 each. This was perfect for our smallish family. However if you have more than 3-4 people you may want to double the recipe and stack 2 egg bites molds on top of each other.

What should I serve with Instant Pot meatloaf bites?

The cool thing about this recipe is that you can make baked potatoes at the same time in the same pot. All you do is place washed potatoes of the same shape and size in a single layer on the trivet. Then place the egg bite mold filled with meatloaf on top of the potatoes. Lower the trivet with the potatoes and meatloaf carefully into the pot.

Besides baked potatoes we served our Instant Pot meatloaf bites with steamed broccoli. While the meatloaf was under the oven’s broiler getting its glaze on I popped broccoli florets into my steamer basket* and lowered them into the Instant Pot (using the same water that was already in there) and used a zero minute pressure cooking time to steam the broccoli. A wonderful dinner with little effort!

What equipment do I need?

  • Electric pressure cooker: To make Instant Pot meatloaf bites I used my 6 quart Instant Pot Duo 60 7 in 1*.
  • A trivet with handles: I love this OXO sling/trivet* and use it all the time for so many different recipes.
  • An egg bite mold: This is the egg bite mold* that I recently purchased. If you want to double the recipe you’ll need 2 of them.

Can I double the recipe?

You can and probably should double the recipe if you have more than 3-4 people eating. However you’ll need two egg bite molds* to be able to double the recipe. Another option is to make it into one big meatloaf and cook it in a pan that fits inside your pot*. Definitely not as cute but it will still taste great!

Description

Use your silicone egg bites mold to make the cutest, tastiest mini meatloaves ever. This recipe can be made with ground beef, turkey or chicken. You can even make baked potatoes at the same time in the same pot!


Ingredients

Scale

For the meatloaf:

  • 15 saltine crackers, crushed
  • 3 Tbsp milk
  • 1 Tbsp dried parsley
  • 1 egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 1/2 tsp Dijon mustard
  • 1 1/2 Tbsp Worcestershire sauce
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 pound lean ground meat (beef, chicken, turkey)

For the glaze:

  • 1/4 cup ketchup
  • 2 tsp apple cider vinegar

Instructions

  1. Add saltines, milk, parsley, egg, onion powder, garlic powder, Dijon, Worcestershire, salt, pepper and meat to a bowl. Mix well with clean or gloved hands. 
  2. Spray egg bite mold with non stick spray. Scoop mixture into egg bite mold cups*. You’ll use about 1/3 cup of mixture for each cup. It will overflow a little bit. 
  3. Loosely cover the mold with foil. Pour 1 ½ cups water in the bottom of Instant Pot liner. Place mold on a trivet* and lower into the pot. 
  4. Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 35 minutes. When time is up move valve to venting. Remove the lid. 
  5. Remove the trivet and mold. 
  6. Stir the ketchup and vinegar together. Spoon a little over the top of each mini meatloaf. Then place pan under your oven’s broiler for 3 minutes. 
  7. Serve and enjoy!

Notes

Recipe adapted from Mel’s Kitchen Cafe

You can make baked potatoes at the same time. Place washed potatoes of the same shape and size in a single layer on the trivet. Then place the mold on top of the potatoes. Lower into the pot and cook according to the recipe above. 

Slow cooker instructions: Combine the ingredients. Form the meatloaf into the shape of a loaf pan that fits inside your slow cooker. Place the pan in the bottom of your slow cooker. Cover and cook on HIGH for 4 hours. Carefully remove the meatloaf. The meatloaf may not look done and bit watery on top. The broiler step helps this immensely. If you’re worried about doneness use a thermometer to make sure the middle of the meatloaf is 160 degrees F.  Place pan under the broiler for about one minute to dry out the meatloaf a bit. Then baste it with the glaze and put it under the broiler for another minute.

    I’ve made this several times my family loves them. My question now is I want to make them ahead and freeze them to take to our resort to have for a dinner one night. I always take my Instant pot to our resort. So can I mix these all up put in my molds and freeze them to cook later or do I need to cook the then freeze them? Thanks for making my life easier. Would love to see more instant pot freezer meals as I have Cancer and try to do freeze ahead things for days I am just not with it.

        Thank you so much unfortunately the Cancer I have is not curable (Multiple Myeloma), But God has it in his hands, and they come out with new treatments all the time. I do not know what I did before finding your site. It has been so great t have wonderful quick Instant pot meals. So would you suggest thawing them first in over night frig then go in Instant pot or cook from frozen? And if frozen how long? My only fear frozen to cook might cause too much moisture?

    Just took them out of the Instant Pot and the meat registered 198F. … 35 min is too long. Hopefully they still taste good.

    Great basic meatloaf. Used listed ingredients but instead of using my one egg bite mold, used 4 silicone oversized muffin cups. Since I’m a widowed empty nester, I glazed one with bbq sauce and browned in toaster oven. Will have one tomorrow – the other 2 are being frozen and will vacuum seal for a future meal. Just got these muffin cups from Amazon – wish I had gotten them sooner!

    If I do this with bread crumbs how much would I need? I bought a container of pre-made. Also, can I use sweet potatoes and would that change the time?

    I love the idea of cooking potatoes at the same time, but wondered about the cooking time (35 min) if I were to use smaller golden round potatoes as weight conscious and most baking potatoes are quite large. Thanjs

    I’m the type of person who uses recipes as a base and then I just toss stuff in as I see fit but for a base this was an amazing recipe! I used beef with a higher fat content, added garlic and onion powder and made the glaze with brown sugar, ketchup and Worcestershire sauce. The cook time was perfection and these were ADORABLE. I love that the recipe is simple and modifiable. Husband was thrilled!

    Making this again (yum!), I noticed you use cooking spray in your video but it’s not in recipe. Have you found it’s not needed with the silicone? I don’t want to try unless you/others have done it without sticking! Also, is there a way to be notified when our comments have been responded to? Now I just come back frequently to check.       I do it and not for long periods of time. Google tells me to “Use food-grade silicone products at recommended temperatures — not above 220 C (428 F)”.

    Karen, now that I’ve used an egg bite mold for meatloaf, since it’s silicone, of course it retains some of the savory cooking odor – just like the rings do, which is why I swap rings – one for savory, one for sweet. Does that odor transfer to sweet bites, like your pancake bites? IOW, do I need two egg bite molds for savory and two for sweet? What do you do? Thanks!

    I found your meatloaf bites recipe and it’s cooking now! Of course with massive potatoes at the bottom of the IP, only one egg bites container will fit, but that was perfect for the 1 pound of ground turkey, etc. It’s cooking now!

      So yummy! They were cute meatloaf logs since they were pretty far over the top of the bites container, but cooked perfectly. If I want them smaller – like pancake bite size – I’ll put some meatloaf mixture in aluminum foil and put it in there on the side, if there’s room.

    I did use a different meatloaf recipe, but still with a pound of ground beef. No way would it fit in one mold! It uses 3/4 cup oatmeal, 1 egg, & 1 cup tomato juice. I used both molds with slightly less than 1/3 cup mixture in each.

    I didn’t have room for my potatoes!

      I would try the same cooking time. Use a thermometer to check the temperature to make sure it is cooked through.

    Karen I will be making these as I have about 3 egg bite molds and I just received the new one that is rectangle and can make 9 bites. I am going to experiment with different cake, cornbread, and brownies bites. I have the recipes for the cornbread bites. Any advice about the cake and brownie bites about cooking times? Many other people have said they have made them but do not give recipe. I really enjoy all of your recipes.

    I’m confused by the timing here. Bacon Barbecue Meatloaf with Mashed Potatoes cooks for 20 minutes, but these minis cook for 35 minutes. Why do they take so much longer?

      It’s because the silicone molds act as an insulator and everything takes longer to cook/bake in them.

      Yes you leave them in the mold. The silicone is safe in the oven. Yes you can make as few as you want and need.

      You stack them on top of each other, twist the top one so it’s not sitting directly on top of the other one.

          I just wouldn’t stack them straight on top of each other as far as the rounded part on top of another rounded part. I would have them alternate. Does that make sense?
