Instant Pot Chicken Tortellini Soup
This soup is very simple but very delicious. It’s like chicken noodle soup but the tortellini and lemon juice take it to a whole new level. My whole family loved this soup and all commented that they would like it again soon. I served it along with a fruit salad and Little Caesar’s Breadsticks.
What kind of chicken? I used boneless, skinless chicken thighs which I prefer over breasts because of their flavor and tenderness. You can use boneless, skinless chicken breasts (cook the same amount of time). Another choice is to use bone-in chicken. After pressure cooking cycle is over you can remove the chicken meat from the bones and discard.
Frozen tortellini? You can find the frozen tortellini in the frozen section at the grocery store. I usually find them by the frozen breads (garlic bread, rolls, etc.) I haven’t tried this recipe with fresh tortellini but it would work just fine. Add the fresh tortellini to the pot the same time you would have added the frozen. It will just take longer to cook (follow the package directions).
Tip for freezing lemon juice: Every now and then I’ll buy a big bag of lemons at Costco and then juice them all at once. I freeze the lemon juice in ice cube trays and then pop them into a ziploc bag and keep in the freezer. Each ice cube of lemon juice is around 1 Tbsp of juice and come in handy for recipes like this one.

Instant Pot Chicken Tortellini Soup

Description
Brothy chicken soup with tortellini and a splash of lemon juice. Leveled up chicken noodle soup.
Ingredients
- 1 Tbsp olive oil
- 1 cup diced onion
- 1 1/2 cups diced or sliced carrots
- 1 cup diced or sliced celery
- 4 cups chicken broth (or 4 cups water + 4 tsp better than bouillon chicken base)
- 1 1/2 pounds boneless skinless chicken thighs (frozen is fine)
- 1 tsp poultry seasoning
- 2 Tbsp chopped fresh parsley
- 2 Tbsp fresh lemon juice
- 3 cups frozen tortellini
- Salt and pepper to taste
Instructions
Instant Pot Recipes:
- Turn Instant Pot to sauté setting. When displays says HOT add in the oil and swirl around. Add in the onions, carrots and celery and sauté for 4-5 minutes.
- Add in the broth and scrape the bottom of the pot so that nothing is sticking. Turn off Instant Pot.
- Add in the chicken and poultry seasoning.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button (or manual button) to 12 minutes. When time is up let the pot sit for 5-10 minutes then move valve to venting. Remove the lid.
- Move the chicken to a cutting board. Pour the frozen tortellini into the Instant Pot. Turn Instant Pot to saute setting. While tortellini are cooking shred or chop the chicken. Add it back into the pot.
- Add the parsley and lemon juice into the pot. When tortellini is cooked through (should only be a total of 3-5 minutes) turn off Instant Pot.
- Salt and pepper to taste. Ladle into bowls and enjoy.
Slow Cooker Recipes:
- Heat a pan over medium high heat. Add in the oil, onions, carrots and celery and sauté for 4-5 minutes. Add to the slow cooker.
- Add in the broth, chicken and poultry seasoning.
- Cover and cook on low for 4-6 hours. Remove lid and add in the tortellini. Cover and cook for 20 minutes.
- Move the chicken to a cutting board and shred or chop the chicken. Add it back into the slow cooker.
- Add the parsley and lemon juice into the slow cooker.
- Salt and pepper to taste. Ladle into bowls and enjoy.

I made this last night and the family loved it! I definitely added more liquid because the 4 cups were not enough. Now. we have leftovers for lunch! This was a great snow day recipe and I will be making this again!
