Description

Brothy chicken soup with tortellini and a splash of lemon juice. Leveled up chicken noodle soup.

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 1 1/2 cups diced or sliced carrots
  • 1 cup diced or sliced celery
  • 4 cups chicken broth (or 4 cups water + 4 tsp better than bouillon chicken base)
  • 1 1/2 pounds boneless skinless chicken thighs (frozen is fine)
  • 1 tsp poultry seasoning
  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp fresh lemon juice
  • 3 cups frozen tortellini
  • Salt and pepper to taste

Instructions

Instant Pot Recipes:

  1. Turn Instant Pot to sauté setting. When displays says HOT add in the oil and swirl around. Add in the onions, carrots and celery and sauté for 4-5 minutes.
  2. Add in the broth and scrape the bottom of the pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the chicken and poultry seasoning.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button (or manual button) to 12 minutes. When time is up let the pot sit for 5-10 minutes then move valve to venting. Remove the lid.
  5. Move the chicken to a cutting board. Pour the frozen tortellini into the Instant Pot. Turn Instant Pot to saute setting. While tortellini are cooking shred or chop the chicken. Add it back into the pot.
  6. Add the parsley and lemon juice into the pot. When tortellini is cooked through (should only be a total of 3-5 minutes) turn off Instant Pot.
  7. Salt and pepper to taste. Ladle into bowls and enjoy.

Slow Cooker Recipes:

  2. Add in the broth, chicken and poultry seasoning.
  3. Cover and cook on low for 4-6 hours. Remove lid and add in the tortellini. Cover and cook for 20 minutes.
  4. Move the chicken to a cutting board and shred or chop the chicken. Add it back into the slow cooker.
  5. Add the parsley and lemon juice into the slow cooker.
  6. Salt and pepper to taste. Ladle into bowls and enjoy.
