Instant Pot Chicken Spectacular
Sometimes you just need an quick and healthy-ish recipe idea for dinner! Maybe that’s everyday for me :)! This recipe is an all-in-one-pot meal that can be put together in around 30 minutes. It uses ingredients you’re likely to have around the house.
I took the idea for this chicken spectacular recipe from an old fashioned chicken casserole recipe. I think my version is much better and much healthier (the other recipe had a lot of mayo in it!). It was a simple but delicious dinner and I think you’ll really love it too!
Ingredients/Substitution Ideas
- Butter–you can also use olive oil
- Celery–sliced or diced
- Carrots–I sliced mine but you can also just throw in baby carrots
- Fresh onion–or 1 Tbsp dry minced onion
- Ben’s Original Long Grain and Wild Rice with seasoning packet–in the orange box
- Water–or broth
- Cooked, chopped chicken–I use rotisserie chicken
- Green beans–canned, fresh or frozen all work well
Steps
- Sauté vegetables: Turn Instant Pot to sauté setting. When display says HOT add in butter and let it melt. Add in the celery, carrots and onion. Saute for about 4 minutes.
- Toast the rice: Toss in the rice and stir well so it’s coated in the butter and vegetables. Turn off Instant Pot.
- Deglaze the pot: Pour in the water and scape bottom of pot so that nothing is sticking.
- Dump in the chicken, the seasoning packet and green beans.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let the pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Serve: Gently stir. Serve and enjoy!
Notes/Tips
- Whenever I go to Costco I buy 2 rotisserie chickens (for 4.99 a piece!). I take the meat off the bones and store 2-3 cups in each ziploc bag. I throw them in the freezer and use them for recipes like this one or for salads. The chicken is so tasty and flavorful and you can’t beat that price!
- We served this all by itself as a one pot meal but if you want to have a side dish try serving with extra vegetables like roasted broccoli.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

can you make this meal in the crock pot?
I haven’t tried this one in the slow cooker yet Maureen! Sometimes rice works out for me in the slow cooker and sometimes not so much!
I loved this recipe! I cooked 2 chicken breasts in my InstaPot first, so I could control the sodium. I will double this recipe next time because there weren’t any leftovers for lunch! This meal also didn’t cost a lot and I had 90% of the ingredients on hand.

Can you please give us the amount of chicken by weight? I have no idea how much chicken 3 cups is to cook. I don’t want to be shoving raw chicken in a measuring cup however I do I have a food scale which is super simple. Thanks!

Hi, this recipe actually uses cooked, chopped chicken. If you are using bite size uncooked pieces of chicken I would use a pound
Can brown rice be used instead of Uncle ben’s?
You could try brown rice however it won’t have any of the seasonings so it will be flavorless. You’ll have to add in your own seasonings. Brown rice requires a 22 minute pressure cook time with a 10 minute natural pressure release.
Can you use another type of rice like rice a roni or white rice. I always have that on hand.
