Instant Pot Guilty Pleasure Chicken and Rice
This easy dump and go meal is ultra creamy, comforting and flavorful. I call it guilty pleasure chicken and rice because the major flavor component is the bacon fat, which “melts” while cooking and permeates the rice and sauce.
Ingredients/Substitution Ideas:
- Chicken broth–or 2 cups water and 2 teaspoons of Better than Bouillon Chicken Base
- Brown rice–you can also use white rice, see notes below for how to adjust the recipe
- Frozen or fresh boneless, skinless chicken thighs or breasts–or a combination of the two. You can also use bone-in chicken pieces.
- Garlic powder
- Black pepper
- Uncooked bacon–or turkey bacon
- Bertolli Creamy Basil Alfredo Sauce–you can use another jarred alfredo sauce of your choice but this one has great flavor
- Paprika–for garnish
Steps to make chicken and rice
In just 3 easy steps you can be on your way to a delicious dinner!
- Layer in the ingredients: Pour broth into Instant Pot. Evenly sprinkle in the rice. Place chicken into the pot. Sprinkle chicken with garlic powder and black pepper. Lay the pieces of bacon on top of the chicken. Dump the alfredo sauce over the top. Don’t stir. This will help prevent the burn error message.
- Pressure cook with a 10 minute natural pressure release.
- Serve: Discard bacon. Stir the rice. Serve chicken and rice sprinkled with the paprika.
Notes/Tips
- To make this with white rice: I used brown rice and it gets so puffy and flavorful, like risotto. You won’t even know it’s brown rice. However, you can also make this with white rice. To do this you’ll want to cut up the chicken into bite size pieces or use chicken tenderloins and then only use a 3 minute pressure cook time with a 10 minute natural pressure release.
- Equipment: I used my 6 quart Instant Pot. You can also make this in your 3 or 8 quart pot with no changes.
- Serve with: This is such a rich dish with the bacon and alfredo sauce you’ll want to serve it alongside some greens like broccoli, salad, asparagus or brussels sprouts to balance out the meal.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
- 2 cups of chicken broth
- 1 1/2 cups raw brown rice
- 1 to 1 1/2 pounds frozen or fresh boneless, skinless chicken thighs or breasts
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 2 slices of uncooked bacon
- 1 (15 oz) jar Bertolli Creamy Basil Alfredo
- 1/8 tsp paprika
Instructions
- Pour broth into Instant Pot. Sprinkle in the rice. Place chicken into the pot. Sprinkle chicken with garlic powder and black pepper. Lay the pieces of bacon on top of the chicken. Dump the alfredo sauce over the top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Discard bacon. Stir the rice. Serve chicken and rice sprinkled with the paprika.

Good recipe, and I loved the “dump and go” aspect of it…..just the thing for a night when I’m lacking in sleep and not feeling great, and better nutritionally than taking up my husband’s offer to go out for fast food. I used bacon fat as someone else asked about,….one tablesppon….and couldn’t taste it at all, but no matter….next time I’ll use bacon strips. (It felt like too much effort to open the new package of bacon and cut it up, etc…..lazy me.) Anyway, it tasted good just like it was! I was in somewhat of a quandary about whether or not to put in the rice first and how long to cook, it because I’ve never had the dreaded burn notice. I did put the chicken in first, then the rice, and cooked per your original instructions. Came out creamy and good and no burn notice!

I made this last night as written, with the rice on the bottom. I got the “Burn” message. Fortunately I was able to save it – depressurized, scraped the bottom well with a spatula, and finished cooking it for 20 minutes on low pressure. It came out tasting great (I did NOT discard the bacon – just cut it into small pieces!). Next time I cook it, chicken will go on the bottom and I will cook it 25 minutes on LOW pressure with a 10 minute natural release. Low pressure has been a better option for me with recipes that have a ‘creamy’ ingredient.

Can Arborio rice be used instead (&/or in an IP)? Realize it changes the schematics of recipe, but we’re just not fans of jarred Alfredo sauce. Or if another recipe has the chicken/creamy rice with great seasoning for flavor? Thanks for all the great recipes & meal rescues!
