What an easy one pot meal! Instant Pot Cheesy Beef Burrito Bowls are a great weeknight dinner that everyone will love. You can top it however you like or even roll up the mixture into a soft, warm flour tortilla. Burrito bowls are also a great option to meal prep and then pack into lunch containers for the whole week. You can make this to your liking with brown rice, white rice, quinoa or even cauliflower. Keep reading for directions on all these options.
Can I make burrito bowls with white rice?
I used brown rice for this recipe. However you can easily use white rice! Long grain white rice, basmati rice, converted/parboiled rice all need 1 ½ cups of broth to 1 cup of rice. Change the cooking time to 5 minutes with a 10 minute natural pressure release. For jasmine rice rinse it first and then use a 1 to 1 cup ratio of water to rice and pressure cook for 4 minutes with a natural pressure release.

Can I make burrito bowls with quinoa?
Yes! You can use 1 cup of rinsed quinoa to a 1 ½ cup broth ratio. Cook the quinoa for only 1 minute with a 10 minute natural pressure release.
Can I make burrito bowls with riced cauliflower?
Riced cauliflower is not great pressure cooked! It cooks way too fast. If you want to make this recipe with cauliflower rice I would brown the beef with the taco seasoning. Then stir in your desired amount of cauliflower rice, ¼ cup of broth, black beans, rotel and corn. Heat through using the saute setting and stir often. When it’s heated through stir in the cheese and serve.
Can I make burrito bowls with ground turkey or ground chicken?
Yes! You can use pretty much any ground meat that you like. I’ve made this with ground turkey and it tastes amazing.
Is this recipe gluten free?
If you use a gluten free taco seasoning like McCormick® Gluten-Free Taco Seasoning Mix then this recipe is gluten free. Make sure to check your broth label as well to see that it does not contain gluten.
What should I serve with Instant Pot Cheesy Beef Burrito Bowls?
The toppings are what make this cheesy beef burrito bowl pop! I love serving this with diced fresh tomatoes or pico de gallo and a dollop of sour cream. For over the top yumminess I love topping the rice with diced avocados or guacamole. I love snipping up some cilantro and sprinkling it over the top. Get creative! Some other options are picante sauce or salsa, tortilla chips, fritos and extra cheese. You can also roll up the mixture into a soft flour tortilla.
Can I freeze the leftovers?
Yes! Rice freezes fairly well. You can keep rice in the freezer for up to one month and it will still retain its moisture and taste. Pack into airtight containers and freeze for lunch or dinner another day!

Description
All the cheesy, delicious innards of a beef burrito made in one pot, your Instant Pot. Scoop it into bowls and top with sour cream, pico de gallo and avocado for a most desirable dinner experience.
Ingredients
- 1 pound lean or extra lean ground beef
- 2–3 Tbsp taco seasoning
- 1 1/3 cup beef broth (or chicken broth)
- 1 cup uncooked brown rice
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 1 (14.5 oz) can black beans, rinsed and drained
- 1 1/2 cup frozen corn
- 4 oz Mexican cheese blend
- Toppings: cilantro, pico de gallo, sour cream, avocados, etc.
Instructions
- Turn your Instant Pot to the saute setting. When the display says HOT add in the beef and break it up*. Add in the taco seasoning. Brown the ground beef for about 5 minutes. Add in the broth and deglaze the pot.
- Sprinkle in the rice. Layer the Rotel, black beans and corn on top.
- Cover the Instant Pot and lock the lid into place. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
- Stir in the cheese.
- Scoop into bowls and add your desired toppings.
Notes
I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also make this in your 3 quart pot with no changes. If you make this in your 8 quart pot increase the broth to 1.5 cups.

You could add it after pressure cooking. Bell peppers don’t hold up well when pressure cooked!

I notice you are using a lot of Rotel now. I would like to suggest you use “Original” and not “Mild”- I think you would be happier. It has a little “kick” but not enough to knock you down. I would guess the “mild” has none. They recently (maybe 5 years ago) got bought out by a company that “knows it all” and they added the mild. Another Yankee that came down here to “save us”! I buy this in the case from Sam’s – probably Costco has it too.
I would be totally okay with the original but I have a son who thinks everything is spicy, so I do it for him. I do love Rotel!

Yes I think you could do that. I might be quite creamy and yummy. I would dollop the refried beans on top instead of the black beans and cook according to the directions.

If I want to use white rice, are you saying that I only cook it for 5 minutes instead of 22 minutes like you do with the brown rice?
Yes that is right! White rice cooks very quick. Do use a 10 minute natural pressure release with it though.

Could chicken breasts be used in place of the ground beef? I’ve looked at your ranch chicken taco rice which is similar but I like the Rotel in the burrito bowls plus my daughter does not eat beef.
Are you using brown rice or white rice? Because that will depend on if you cut up the chicken or keep it whole to cook.
