Instant Pot Amish Cabbage and Potato Casserole
This simple potato and cabbage dish only has a handful of ingredients but it totally hits the spot! It sort of reminds me of a cross between ground beef stroganoff and unstuffed cabbage rolls. The cabbage gets cooked down and it’s almost like a noodle. It adds bulk and texture without calories. The kids and their friends all scraped the pot clean! You can make this in the Instant Pot or the slow cooker–you choose!
Ingredients/Substitution Ideas
- Ground beef (I used 85/15)–or ground turkey or ground pork
- Diced onion–fresh or frozen
- Garlic powder
- Kosher salt
- Black pepper
- Beef broth–or 1 cup of water with a teaspoon of Better than Bouillon Beef Base
- Cabbage–I used green cabbage
- Red potatoes–or yellow yukon gold potatoes
- Cream cheese–or velveeta cheese
- Tomato paste
- Worcestershire sauce
Steps
Slice the potatoes into quarter inch slices. No need to peel the red potatoes!

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Stir in the garlic powder, salt and pepper.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off saute setting. Add in the cabbage, then potatoes and finally the cream cheese, tomato paste and Worcestershire sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move the valve to venting and remove the lid.

Stir well. Salt and pepper to taste. Serve and enjoy!

Notes/Tips
- We served this as an all-in-one-pot dish but if you’d like you can serve it with cornbread and honey butter and a side of green beans.
- Freeze your leftover tomato paste in one tablespoon increments to use for future recipes. I use my cookie scooper and scoop the paste onto a parchment-lined pan and freeze. Once frozen, I pop off the blobs and freeze in a ziplock bag.
- This recipe can be gluten-free if you use gluten-free Worcestershire sauce.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
- 1 lb lean ground beef (I used 85/15)
- 1 cup diced onion
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 cup beef broth
- Half of a small head of cabbage, cored and chopped
- 1 pound sliced red potatoes (slice about 1/4 inch thick)
- 4 oz cream cheese
- 2 Tbsp tomato paste
- 1 Tbsp Worcestershire sauce
Instructions

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Stir in the garlic powder, salt and pepper. Add the mixture to the slow cooker.
- Stir in the broth, cabbage, potatoes, cream cheese, tomato paste and Worcestershire sauce.
- Cover and cook on low for 6-8 hours.
- Stir well. Salt and pepper to taste. Serve and enjoy!

I was searching for a recipe to use ground beef, red potatoes and cabbage (what I had on hand, lol!)
This is perfect comfort food! I was concerned about the cooking time (wondering if the potatoes would still be crunchy) but all the textures are spot on! I did not have cream cheese, so I added sour cream after the cooking was done. I also added (prior to cooking) 1 tbsp red wine vinegar, 1 tbsp cooking wine, and a generous shake of red chili flakes (we like spice). Everything else I followed to the letter. Hubby and I both agree it is delicious!

I saw t;his and noticed that it had ground beef, cabbage, and potatoes: three ingredients that I had on hand and wanted to use up. I admiit, I was a little leary of the cream cheese but I decided to give it a whirl. I only had about a half pound of ground beef, and I had chicken stock instead of beef and russet potatoes and not red but I pushed forward. Both my husband and I said the same thing when we took our first bite “Delicious” I consider this recipe a great find.
