Instant Pot 3-Ingredient Blackberry Cobbler
Okay, you might be thinking “come on Karen, this isn’t a real recipe!” Just give it a chance. That’s all I’m asking. My family and I were DYING over this dessert. We were all in a major depression that there wasn’t enough for us to have seconds.
We were in the mood for a fruit cobbler and went grocery shopping to figure out what to make. We hemmed and hawed whether frozen produce would work. I thought maybe frozen mangoes would be delicious. However in the end we noticed fresh blackberries were on sale and thought that instant pot blackberry cobbler would be the perfect choice. We were so right. The tartness from the berries with the sweet cake mix was the perfect combination and when we topped it with vanilla ice cream it was pure heaven in our mouths.
To tell you the truth, I’m not entirely sure that frozen fruit would work optimally in this recipe. I actually don’t think it would. Too much liquid and sogginess. I haven’t tried it yet so I can’t say for sure but if you have the option please go for the fresh blackberries. It is worth it!
We used half a cake mix and a 12 oz package of black berries, however if you want more than 4 servings you can easily just use a whole cake mix, a stick of butter and 2 packages of blackberries. This is what I’m going to do next time…definitely.

Equipment you’ll need for this recipe…
You’re going to need a dish that will fit inside your Instant Pot for this recipe. I just ordered a 7 inch cake pan with 4 inch sides.* Basically a small, deep cake pan. It is the perfect accessory to go along with your Instant Pot. You can use it to make lasagna or even this meatloaf and mashed potatoes. You could also use a Corningware* or oven safe Pyrex dish.
Both of my Instant Pots came with a trivet with long handles, as shown in the video. Did yours? I’ve heard some people say that they didn’t get one. Well you’re going to need a trivet * if you don’t have one. They come in handy for so many recipes like spaghetti squash or hard boiled eggs.
Technically you don’t NEED a digital kitchen scale but I highly recommend getting one*. They are so handy. When you read a recipe that says 12 ounces of chicken you can measure it out precisely. Or pasta…I never know how much 8 ounces of pasta is but then I just get out my scale and I know exactly. I love using my digital kitchen scale for baking too. I don’t use measuring cups for my favorite chocolate chip cookie recipe anymore…just a scale.
A pastry blender comes in handy to cut the butter into the cake mix for this recipe but it is not necessary. You can also use a fork if you’re in a pinch.
Of course you’ll need your electric pressure cooker as well. I used my 6 quart Instant Pot Duo 60 7 in 1*to make Instant Pot 3-ingredient blackberry cobbler. I have really loved this Instant Pot. You could also make this in an 8 quart pot.

Instant Pot 3-Ingredient Blackberry Cobbler

Description
Fresh blackberries are topped with a white cake mix/butter mixture and cooked quickly in your electric pressure cooker. Serve topped with vanilla ice cream or whipped cream and enjoy an amazing dessert with minimal work and time!
Ingredients
- 1 (12 oz) package of fresh blackberries, washed and patted dry
- 8 oz of a white cake mix (this will be about half the package)
- 1/4 cup butter
- 1 cup water (for the bottom of the Instant Pot)
Instructions
- Spray an oven safe dish that will fit inside your Instant Pot with non-stick cooking spray.
- Put the berries into the bottom of the dish.
- In a medium bowl use a pastry blender to cut the butter into the cake mix until it is crumbly.
- Spread the cake mix mixture over the blackberries.
- Cover the dish with foil (this will prevent the top from getting mushy).
- Pour 1 cup of water into the bottom of your Instant Pot. Place a trivet in the bottom of the pot. Carefully lower the pan onto the trivet.
- Cover the Instant Pot and make sure the valve is set to “sealing.” Set the timer on manual for 10 minutes (it should be on high pressure). Once the timer beeps let the pressure come down naturally for 10 minutes. Then release any extra pressure by switching the valve to “venting.”
- Remove the lid. Using hot pads, carefully lift the trivet and bowl out of the Instant Pot. If you’d like to brown the top of the cobbler you can do this by removing the foil and sticking the bowl under the broiler of your oven for 3-4 minutes.
- Serve the cobbler with whipped cream or vanilla ice cream.

You can easily double this recipe. It was just enough for the four of us but if you want seconds, which you will, you’ll need more.
I haven’t tried frozen berries yet. I am not sure you’d get the same awesome results. If the fruit is frozen the cobbler might come out mushy with too much liquid.

Oh yes I’m sure it could! I would bake at 350 for 45 minutes?? But not totally sure since I haven’t done it myself.
I made this for dessert tonight. I did add a few ingredients just because I knew the additions would make it even better based upon my many years of cooking and baking. I had a French Vanilla cake mix on hand so I used that. And, I used my scale to measure out half of the mix, as you suggested. To the berries I added a light sprinkling of cardamom spice, about a tablespoon of brown sugar, and about 2 teaspoons of unsalted butter in pieces. I scattered those additions over top of the berries in the Corning ware casserole baking dish that would go in my 6 qt Instant Pot. To the half of the cake mix and softened butter mixture I added about a 1/3 cup of chopped walnuts. I also broiled the finished cobbler in my toaster oven to crisp up the top, as you suggested. This was delicious!! Highly recommend your readers try this recipe! Soooo good.

it should be soft enough that you can cut it in to the cake mix.
My mom and I used to pick fresh dewberries which are basically the same as black berries. She still did until she had to be moved to a memory unit. She grew them all around her fence line. She canned them, froze them and made the best cobblers and dumplings from them. I still make them from store bought berries but, they are not the same as fresh picked or home canned. We made something very similar to this in the Dutch Oven at Girl’s camp last year using a frozen berry blend from Costco. It was fabulous. I think I’ll try it and see if it works out for me, even if I have to thaw and dry out the berries first.
