Historical Casserole–a one-pot Instant Pot beef and noodle dinner that combines seasoned ground beef, spicy brown mustard, sweet corn and melty cheddar.

Historical Casserole

Today’s recipe is an oldie but a goode. The combo of beef, noodles, and a hint of sweetness from ketchup and corn is nostalgic and satisfying. Most ingredients are basic staples you likely already have on hand. This recipe is adapted from Historical Round-Steak Casserole on Silver Spring Foods.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Onion
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Beef broth–or water and Better than Bouillon beef base
  • Old fashioned wide egg noodles–I used Mrs. Miller’s brand
  • Spicy brown mustard–or 1 Tbsp horseradish
  • Ketchup
  • Tomato sauce
  • Frozen sweet corn
  • Cheddar cheese–or colby

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the egg noodles. Dump in the mustard, ketchup, tomato sauce and corn.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir well. Stir in the cheese. Serve and enjoy!

Notes/Tips

  • Serve with a green salad or some roasted green beans.
  • I used the wide old fashioned egg noodles that are in the stand up bags. I find them with the other pastas at the grocery store.
  • Layer, don’t stir before pressure cooking to prevent the dreaded burn notice.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 1 pound lean ground beef (I used 93/7)
  • 1/2 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups beef broth
  • 8 ounces old fashioned wide egg noodles
  • 2 Tbsp spicy brown mustard
  • 2 Tbsp ketchup
  • 1 (8 oz) can tomato sauce
  • 1 1/2 cups frozen sweet corn
  • 1/2 cup sharp shredded cheddar cheese

Instructions

    could you make this on top of stove, looks good and I don’t have a instant pot.

      Sure you can do that. Here’s how I would try it.
      Instructions (Stovetop Method):
      1. Brown the Beef:
      In a large, deep skillet or Dutch oven over medium-high heat, cook the ground beef and onions until the beef is browned and the onions are soft, about 5–7 minutes.
      Drain excess grease.
      Stir in salt, pepper, and garlic powder.

      2. Add Liquids and Noodles:
      Pour in the beef broth (I would add an extra half cup) and scrape the bottom of the pan to loosen any browned bits.
      Stir in the mustard, ketchup, tomato sauce, and frozen corn.

      3. Cook the Noodles:
      Bring the mixture to a boil.
      Stir in the egg noodles, reduce heat to a simmer, and cover.
      Cook for 10–12 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed. Add a splash of broth or water if it gets too dry before the noodles are cooked.

      4. Finish with Cheese:
      Once the noodles are tender, remove from heat and stir in the shredded cheese until melted and creamy.

      5. Serve:
      Let it sit for 5 minutes to thicken up a bit before serving.
