Silly Chili–seasoned beef in a tomato sauce with macaroni and vegetables made in your Instant Pot or Crockpot.

Instant Pot or Crockpot Silly Chili

Silly Chili

Take a break from serious chili and get playful with this throw-everything-in version. Although not an authentic chili recipe is still does the trick to warm you up and feed a crowd. Greg took three bowls down…he loved it so much. It tastes great served with warm cornbread and honey butter.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey, pork
  • Onion–yellow, white
  • Black pepper
  • Kosher salt
  • Beef broth–or water and Better than Bouillon
  • Elbow macaroni
  • Tomato sauce
  • Garlic powder
  • Chili powder
  • Cumin
  • Rotel–I used mild
  • Kidney beans–or cannellini beans
  • Frozen mixed vegetables
  • Cheddar cheese–or mozzarella, monterey jack

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, pepper and salt. Brown for 5 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the macaroni, tomato sauce, garlic powder, chili powder, cumin, Rotel and beans. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir in the vegetables.

Ladle into bowls and top with a bit of shredded cheese.

Notes/Tips

  • Serve with dinner rolls, breadsticks or french bread.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Seasoned beef in a tomato sauce with macaroni and vegetables made in your Instant Pot or Crockpot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp black pepper
  • 1 tsp kosher salt
  • 1 1/2 cups beef broth
  • 1/2 cup elbow macaroni
  • 2 (8 oz) cans tomato sauce
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 (10 oz) can Rotel
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 cup frozen mixed vegetables
  • Shredded cheddar cheese, for topping

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, pepper and salt. Brown for 5 minutes.

  3. Add in the macaroni, tomato sauce, garlic powder, chili powder, cumin, Rotel and beans. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the vegetables.
  6. Ladle into bowls and top with a bit of shredded cheese. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion, pepper and salt. Brown for 5 minutes. Transfer to the slow cooker. 
  2. Stir in the broth, macaroni, tomato sauce, garlic powder, chili powder, cumin, Rotel and beans.
  3. Cover and cook on high for 2 hours, or until pasta is cooked through. 
  4. Stir in the vegetables and let cook for another 15 minutes.
  5. Ladle into bowls and top with a bit of shredded cheese.
