9th Hole Casserole–slow cooker or Instant Pot tortellini and Italian meatballs in a luscious tomato sauce. A dump and go recipe!

9th Hole Casserole

Throw the ingredients for this delicious tortellini and meatball recipe into a crockpot and come back after 9 holes of golf to a finished meal. This easy dump and go recipe can be made in the slow cooker or the Instant Pot. It tastes so good! The sauce is simple but so tasty I wanted to slurp it off my plate.

Ingredients/Substitution Ideas

  • Beef broth–or chicken broth
  • Italian style frozen meatballs
  • Frozen cheese tortellini
  • Crushed tomatoes
  • Butter
  • Onion powder
  • Garlic powder
  • Kosher salt
  • Spinach–fresh or frozen
  • Mozzarella
  • Parmesan

Steps

Pour broth into bottom of Instant Pot. Line the bottom of the pot with the meatballs.

Add tortellini on top of meatballs. Dump tomatoes over tortellini. Add in the butter, onion powder, garlic powder and salt. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 0 (zero) minutes. When time is up move valve to venting and then remove the lid. 

Stir in the spinach, mozzarella and parmesan cheese.

Serve and enjoy!

Notes/Tips

  • Serve with garlic bread and a green salad.
  • I haven’t tried fresh refrigerated tortellini with this but I *think* it would work just fine, same cooking time.
  • I used my 3 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days.

Description

Ingredients

Scale
  • 1/2 cup beef broth
  • 16 ounces Italian style frozen meatballs
  • 16 ounces frozen cheese tortellini
  • 1 (28 oz) can crushed tomatoes
  • 1/4 cup butter
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 2 cups chopped spinach
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded parmesan

Instructions

Slow Cooker Instructions:

  1. Add broth, meatballs, tortellini, tomatoes, butter, onion powder, garlic powder and salt into slow cooker and stir.
  2. Cover and cook on low for 2-3 hours.
  3. Stir in the spinach, mozzarella and parmesan cheese.
  4. Serve and enjoy!

Instant Pot Instructions:

    I made the 9th hole Casserole last night because it looked easy and delicious. I was not dissapointed! It came out great and my grandchildren said that I could make it again. Now, that’s a compliment!
    It’s just dump the food in, cook for 3 hours, dump the rest of the ingredients in, stir and serve.
