Description

A one-pot Instant Pot beef and noodle dinner that combines seasoned ground beef, spicy brown mustard, sweet corn and melty cheddar.


Ingredients

  • 1 pound lean ground beef (I used 93/7)
  • 1/2 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups beef broth
  • 8 ounces old fashioned wide egg noodles
  • 2 Tbsp spicy brown mustard
  • 2 Tbsp ketchup
  • 1 (8 oz) can tomato sauce
  • 1 1/2 cups frozen sweet corn
  • 1/2 cup sharp shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the egg noodles. Dump in the mustard, ketchup, tomato sauce and corn.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir well. Stir in the cheese. Serve and enjoy!
