Haven’t Gone Shopping Yet Soup
Do you ever stretch your grocery shopping days just a little too long? That’s exactly what happened to me. I had a whole list of recipes I wanted to make but basically none of the ingredients to make them, so this soup is what happened instead. And honestly, it was a happy accident. It turned out awesome and ended up being the perfect meal to feed a few friends who stopped by right as it was finishing up. Everyone loved it. I loved it because it was so easy…dump a few things in, let it cook, and you’re done.
Ingredients/Substitution Ideas
- Ground Sausage–or ground turkey sausage
- Dried Onion–or ½ cup minced fresh onion
- Chicken Broth–or water and Better Than Bouillon chicken base
- Zatarain’s Red Beans and Rice Mix–or another boxed red beans and rice mix
- Kidney Beans–or black beans or pinto beans
- Fire-Roasted Tomatoes–or regular diced tomatoes
- Frozen Sweet Corn–or canned corn (drained)
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the remaining ingredients.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes (or pressure cook on low for 3 minutes). When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir. Ladle into bowls and serve.

Notes/Tips
- Serve with biscuits, cornbread or crusty rolls and a side salad.
- To make it spicy use hot sausage or add a pinch of cayenne or red pepper flakes.
- I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. To freeze let it cool completely, then freeze in freezer-safe containers for up to 3 months.
- This recipe is very forgiving. Swap beans, tomatoes or even the sausage based on what you’ve got. That’s kind of the whole point.
- This recipe easily doubles, and the flavor actually improves the next day, making it perfect for meal prep.

- 2 Tbsp dried onion
- 6 cups chicken broth
- 1 (8 oz) package Zatarain’s red beans and rice
- 1 (15.5 oz) can kidney beans, rinsed and drained
- 1 (15 oz) can fire roasted tomatoes
- 1 cup frozen sweet corn
Instructions

- Heat a pan over medium high heat. Add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Transfer to slow cooker.
- Add in the remaining ingredients.
- Cover and cook on low for 3-4 hours.
- Stir. Ladle into bowls and serve.
