Description
An easy Instant Pot or slow cooker pantry soup made with sausage, red beans and rice for a quick, no-grocery-run dinner.
Ingredients

- 8 oz ground sausage
- 2 Tbsp dried onion
- 6 cups chicken broth
- 1 (8 oz) package Zatarain's red beans and rice
- 1 (15.5 oz) can kidney beans, rinsed and drained
- 1 (15 oz) can fire roasted tomatoes
- 1 cup frozen sweet corn
Instructions
Instant Pot Instructions:
- Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the remaining ingredients.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes (or pressure cook on low for 3 minutes). When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir. Ladle into bowls and serve.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Transfer to slow cooker.
- Add in the remaining ingredients.
- Cover and cook on low for 3-4 hours.
- Stir. Ladle into bowls and serve.
