Ranger Frank Soup–a fast and easy Instant Pot (or slow cooker) chili soup with ground beef, ground pork, Rotel, kidney beans and fajita seasoning.

Ranger Frank Soup (Instant Pot or Crockpot)

Ranger Frank Soup

This recipe is sort of a cross between soup and chili. It’s the perfect meal for this fall time of year! It really comes together quickly (there is no chopping!) and it has tons of flavor thanks to the fajita seasoning and Rotel tomatoes. With two types of meat you’ll be in the good graces of the carnivores in your family. We loved this soup topped with a dollop of sour cream, some cheddar cheese and Fritos. Enjoy!

Recipe adapted from Texas Ranger Chili on Texicureans.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Ground pork
  • Onion
  • Fajita seasoning–I just used Winco brand
  • Beef broth–or water and Better than Bouillon beef base
  • Black pepper
  • Chili powder
  • Garlic powder
  • Rotel–I used mild
  • Tomato sauce
  • Kidney beans–or black, pinto

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and pork and break it up. Add in the onion.

Add in the fajita seasoning. Brown for 5 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Dump in the pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans. 

Cover Instant Pot and secure the lid. Set the SOUP button to 10 minutes or if you don’t have a soup button set the pressure cook/manual button to 10 minutes on low pressure. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir, serve and enjoy!

Notes/Tips

  • Serve with a dollop of sour cream, a sprinkling of shredded cheddar and fritos or tortilla chips.
  • This recipe can be gluten free if you use gluten free fajita seasoning. This recipe is dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with ground pork are mountain meatballs and ikea meatballs.

Description

A fast and easy Instant Pot (or slow cooker) chili soup with ground beef, ground pork, Rotel, kidney beans and fajita seasoning.


Ingredients

Scale
  • 1/2 pound lean ground beef
  • 1 pound ground pork
  • 1 medium onion, diced
  • 1 (1.25 oz) packet fajita seasoning
  • 2 cups beef broth
  • 1 tsp black pepper
  • 1 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1 (10 oz) can Rotel (I used mild)
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can kidney beans, rinsed and drained

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and pork and break it up. Add in the onion. Add in the fajita seasoning. Brown for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Dump in the pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans. 
  4. Cover Instant Pot and secure the lid. Set the SOUP button to 10 minutes or if you don’t have a soup button set the pressure cook/manual button to 10 minutes on low pressure. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir, serve and enjoy! 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and pork and break it up. Add in the onion. Add in the fajita seasoning. Brown for 5 minutes. Transfer to the slow cooker.
  2. Stir in the broth, pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans. 
  3. Cover and cook on low for 4 hours. 
  4. Stir, serve and enjoy!

    My husband made this but used a full pound of both pork and beef. Also he used taco seasoning. It was delicious and meaty. I too thought there was an onion and am glad you’ve updated the recipe.
    We put plain greek yogurt on instead of sour cream and it helped cut the heat for me. Delicious! Thank you!

    The photo looks like some onions are also in the recipe but no onions are listed in the ingredients.

    Oooooo! Can’t wait to make this for my “resident carnivore”. He’s gonna love it! Will be back with stars.
    BTW, here’s my recipe for Do-it-Yourself Fajita Seasoning:
    2 T cornstarch (optional) 4 t chili powder
    2 t salt 2 t paprika (I use smoked)
    1 t onion powder 1 t garlic powder
    1 t cumin 1/4 t cayenne
    1 t sugar (optional)
    Use 3 T in place of store-bought Fajita seasoning. Store extra in air-tight jar in cool, dry place.

        You are welcome, Chad. I should’ve added that the cornstarch is for when you’re coating this mixture on chicken or beef….you may not want to use it for just the soup (but it won’t hurt, because I think they put it in the store-bought one). Also, if you’re like me, you’ll play around with the measurements ’til you get it just right for YOU.

      Yes, use the slow cooker instructions listed at the bottom of the recipe card. Should be great.
