Hamburger Mashed Potato Casserole–creamy mashed potatoes, seasoned ground beef, sweet BBQ sauce and melty cheddar cheese layered and baked together for an easy, comfort food dinner.

Hamburger Mashed Potato Casserole

Hamburger Mashed Potato Casserole

This casserole gave me shepherd’s pie vibes with a slightly sweet BBQ twist. I used my Instant Pot to quickly steam the potatoes while I cooked up the meat mixture (but if you don’t have an Instant Pot you can just boil on the stove). Then I layered everything together in a baking dish, topped it with cheese and baked it up until hot and bubbly. This recipe works because you’ve got the perfect balance of creamy, savory, cheesy and just a hint of sweetness all in one bite!

Ingredients/Substitution Ideas

  • Russet potatoes–or Yukon gold potatoes
  • Butter
  • Half and half–or milk
  • Kosher salt
  • Black pepper
  • Lean ground beef–or ground turkey
  • Onion–or shallot
  • Garlic powder
  • Paprika
  • Tomato paste
  • BBQ sauce
  • Water
  • Frozen mixed vegetables
  • Shredded cheddar cheese–or Colby Jack

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Place a trivet in the bottom of the pot. Place potatoes on top of the trivet. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. (You can also do this step on the stove. Cube the potatoes and add to a pot of boiling water. Boil under tender)

Meanwhile make the beef layer. Heat oven to 350° F. Heat a pan over medium high heat add in the beef and break it up. Add in the onions. Cook until no longer pink. Drain off excess grease. Stir in salt, pepper, garlic powder, paprika, tomato paste, BBQ sauce, water and veggies. Stir until incorporated. Turn off heat. 

Once potatoes are finished cooking move valve to venting and remove the lid. Place potatoes into a mixing bowl and mash. Stir in the butter, half and half, salt and pepper until creamy. 

Spread half of the potatoes in the bottom of a 8×8 inch baking dish. Then spread the meat mixture on the top. Spread the remaining potatoes on top and sprinkle with cheese. 

Bake for 25 minutes for a metal pan or 30 minutes for a glass pan.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad or green beans.
  • This recipe is gluten free.
  • I used my 8×8 inch pyrex* to bake the casserole in.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This freezes well. Assemble, cover tightly and freeze before baking (or after baking and cooling) for up to 2 months

Ingredients

For the potatoes:

  • 32 oz Russet potatoes, peeled
  • 4 Tbsp butter
  • 2/3 cup half and half
  • 3/4 tsp kosher salt
  • 3/4 tsp black pepper

  • 16 oz lean ground beef
  • 1/2 cup diced onion
  • 3/4 tsp kosher salt
  • 3/4 tsp black pepper
  • 3/4 tsp garlic powder
  • 3/4 tsp paprika
  • 1 Tbsp tomato paste
  • 1/4 cup BBQ sauce
  • 1/4 cup water
  • 2/3 cup frozen mixed veggies
  • 1 cup shredded cheddar cheese

    Hey, Karen. Do you think I could sub ketchup for the BBQ sauce?

      You can, but ketchup is quite a bit sweeter and less smoky than BBQ sauce, so the flavor will be a little different. If you have it, I’d add a splash of vinegar and a pinch of smoked paprika or Worcestershire to the ketchup to get it closer to BBQ sauce. It will still be tasty!
