Shepherds Pie Soup–seasoned ground beef, tender potatoes, green beans, and a savory tomato-beef broth. This is everything you love about shepherd’s pie, transformed into a comforting bowl of soup.

Shepherds Pie Soup

What I love most about this recipe is how it includes every layer of shepherd’s pie without the need for separate cooking steps or oven time. The potatoes cook right in the broth, while the green beans add a fresh pop of color and texture. My favorite part is the generous topping of sharp cheddar cheese that create those irresistible cheese pulls. I was cooking for a small group so I made a small batch of soup. However, this recipe is easy to double in a 6 or 8 quart pot.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion–or shallot
  • Kosher salt
  • Black pepper
  • Beef broth–or water and Better Than Bouillon beef base
  • Garlic powder–or 1 Tbsp minced fresh garlic
  • Italian seasoning
  • Rubbed sage
  • Ground mustard–or 1 tsp Dijon mustard
  • Steak sauce–or Worcestershire sauce
  • Tomato paste
  • Tomato sauce
  • Fresh green beans–or frozen green beans
  • Yukon gold potatoes–or peeled russet potatoes
  • Shredded cheddar cheese–or Colby Jack

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Keep Instant Pot on so that it can start heating up the broth while you prep all the ingredients. 

Add in the garlic powder, Italian seasoning, sage, ground mustard, steak sauce, tomato paste, tomato sauce, green beans and potatoes. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes. When time is up move valve to venting. Remove the lid.

Use a slotted spoon to move half of the potatoes to a bowl. Mash with a fork and then stir them back into the soup.

Ladle into bowls and top each bowl with a generous heap of cheddar cheese.

Notes/Tips

  • Serve with crusty bread, dinner rolls, or biscuits.
  • Add the cheddar after ladling into bowls so it melts smoothly and doesn’t clump in the pot.
  • Stir in 1/4 cup heavy cream or half-and-half at the end for an extra luxurious texture. Make sure to temper first.
  • Feel free to add frozen peas, corn, or diced carrots for extra vegetables and color.
  • Add a pinch of red pepper flakes or a dash of hot sauce if you like a little heat.
  • This recipe can be gluten free if you use gluten free steak sauce.
  • This recipe can be dairy free if you leave out the cheddar.
  • I used my 6 quart Instant Pot*. You can also make this in a 3, 4* or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This soup freezes well. Let it cool completely, then freeze in freezer-safe containers for up to 3 months. Thaw overnight in the fridge and reheat gently.

Ingredients

  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp rubbed sage
  • 1/4 tsp ground mustard
  • 1 Tbsp steak sauce
  • 1 Tbsp tomato paste
  • 1 (8 oz) can tomato sauce
  • 8 oz fresh green beans, trimmed and cut into 1 inch pieces
  • 16 oz yukon gold potatoes, cut into 1/2 inch cubes
  • Shredded cheddar cheese, for serving

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper. Transfer to the slow cooker.
  2. Stir in the broth, garlic powder, Italian seasoning, sage, ground mustard, steak sauce, tomato paste, tomato sauce, green beans and potatoes. 
  3. Cover and cook on low for 4 hours.
  4. Use a slotted spoon to move half of the potatoes to a bowl. Mash with a fork and then stir them back into the soup. 
  5. Ladle into bowls and top each bowl with a generous heap of cheddar cheese.
