Description

Creamy mashed potatoes, seasoned ground beef, sweet BBQ sauce and melty cheddar cheese layered and baked together for an easy, comfort food dinner.


Ingredients

For the potatoes:

  • 32 oz Russet potatoes, peeled
  • 4 Tbsp butter
  • 2/3 cup half and half
  • 3/4 tsp kosher salt
  • 3/4 tsp black pepper

For the meat layer:

  • 16 oz lean ground beef
  • 1/2 cup diced onion
  • 3/4 tsp kosher salt
  • 3/4 tsp black pepper
  • 3/4 tsp garlic powder
  • 3/4 tsp paprika
  • 1 Tbsp tomato paste
  • 1/4 cup BBQ sauce
  • 1/4 cup water
  • 2/3 cup frozen mixed veggies
  • 1 cup shredded cheddar cheese

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Place a trivet in the bottom of the pot. Place potatoes on top of the trivet. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. (You can also do this step on the stove. Cube the potatoes and add to a pot of boiling water. Boil under tender)
  2. Meanwhile make the beef layer. Heat oven to 350° F. Heat a pan over medium high heat add in the beef and break it up. Add in the onions. Cook until no longer pink. Drain off excess grease. Stir in salt, pepper, garlic powder, paprika, tomato paste, BBQ sauce, water and veggies. Stir until incorporated. Turn off heat. 
  3. Once potatoes are finished cooking move valve to venting and remove the lid. Place potatoes into a mixing bowl and mash. Stir in the butter, half and half, salt and pepper until creamy. 
  4. Spread half of the potatoes in the bottom of a 8×8 inch baking dish. Then spread the meat mixture on the top. Spread the remaining potatoes on top and sprinkle with cheese. 
  5. Bake for 25 minutes for a metal pan or 30 minutes for a glass pan.
