Hobo Ground Beef Casserole–an easy and delicious slow cooker dinner of seasoned ground beef, sliced potatoes, carrots, cabbage, bacon and cheddar.

Hobo Ground Beef Casserole

Crockpot Hobo Casserole

This is an amped up version of hobo casserole. I added in some extra ingredients that brought it to a new level. The cabbage, mushrooms and cabbage add some nutrition and the bacon crumbles are always a flavor booster. This is a perfect option to make in the afternoon in the slow cooker and have it ready for dinner time. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onions–or shallot
  • Mushrooms–or cubed zucchini
  • Dried parsley–or fresh parsley
  • Kosher salt
  • Black pepper
  • Garlic powder–or minced fresh garlic
  • Smoked paprika
  • Dried rosemary
  • Dried thyme
  • Dried sage
  • Bacon crumbles
  • Yukon gold potatoes–or russet potatoes
  • Cabbage
  • Carrots
  • Cream of chicken soup–or cream of mushroom soup
  • Chicken or beef broth–or water and Better than Bouillon chicken base
  • Sharp cheddar cheese–or Monterey Jack cheese

Steps

Heat a pan over medium high heat. Add in the lean ground beef and break it up. Add in the onions and mushrooms. Brown for 5 minutes. Drain off excess grease. Stir in the parsley, salt, pepper, garlic powder, paprika, rosemary, thyme and sage. Transfer to the slow cooker.

Stir in the bacon, potatoes, cabbage, carrots, cream of chicken soup and broth.

Cover and cook on high for 3 hours. 

Sprinkle the cheese on top and let it melt. 

Serve and enjoy!

Notes/Tips

  • Serve with green beans and a buttered dinner roll.
  • You can make this gluten free if you use gluten free cream of chicken soup. I’ve noticed that Campbells now makes a gluten free version of cream of chicken and cream of mushroom soup.
  • I made this in my 6 quart Ninja slow cooker. My slow cooker has a stovetop function so I did the browning of the beef right inside the slow cooker.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. This casserole can be frozen, though the potatoes may soften slightly after thawing. Freeze cooled portions in freezer containers for up to 2 months

Description

An easy and delicious slow cooker dinner of seasoned ground beef, sliced potatoes, carrots, cabbage, bacon and cheddar.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1/2 cup diced onions
  • 4 oz sliced mushrooms
  • 1 tsp dried parsley
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried thyme
  • 1/4 tsp dried sage
  • 1/2 cup bacon crumbles
  • 16 oz thinly sliced Yukon gold potatoes
  • 2 cups shredded cabbage
  • 2 carrots, peeled and cut into 1/2 inch pieces
  • 1 (10.5 oz) can cream of chicken soup (or cream of mushroom)
  • 1/2 cup chicken or beef broth
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Heat a pan over medium high heat. Add in the lean ground beef and break it up. Add in the onions and mushrooms. Brown for 5 minutes. Drain off excess grease. Stir in the parsley, salt, pepper, garlic powder, paprika, rosemary, thyme and sage. Transfer to the slow cooker.

  3. Cover and cook on high for 3 hours. 
  4. Sprinkle the cheese on top and let it melt. 
  5. Serve and enjoy!

    can the Hobo recipe be canned?

      No, this recipe should not be canned.

      There are several ingredients in this recipe that make it unsafe for home canning, even with a pressure canner.

      Here’s how I would do it:
      Turn the Instant Pot to Sauté.
      Add the ground beef and break it up. Add the onions and mushrooms and cook for about 5 minutes, until the beef is browned. Drain excess grease if needed.
      Stir in the parsley, salt, pepper, garlic powder, paprika, rosemary, thyme, and sage.
      Pour in the broth and scrape the bottom of the pot well to remove any browned bits (this helps prevent the burn notice).
      Add the potatoes, cabbage, carrots, and bacon. Do not stir much—just spread them out. Dump the cream of chicken soup on top.
      Cover the Instant Pot and set the valve to Sealing.
      Cook on Manual/Pressure Cook for 2 minutes.
      When the time is up, quick release the pressure.
      Sprinkle the cheddar cheese over the top and place the lid on loosely for 2–3 minutes to melt the cheese.
      Serve and enjoy!
