Instant Pot Breakfast Strata

I was pleasantly surprised at how good this Instant Pot breakfast strata turned out! The layered ingredients taste so good together. The four of us took it down in one sitting, no leftovers.

The cool thing about this recipe is that you can prep it the night before and bake in the morning. Or you can serve it for a brunch or dinner. I love breakfast for dinner!

Try making this Instant Pot breakfast strata with different types of breads. Good choices are herbed breads or cheesy breads. French bread and baguettes work well too because they are sturdier. You can even use plain whole wheat bread and it tastes great.

There are three different ways to cook this casserole. You can use your Instant Pot with the pot-in-pot method, directly in a slow cooker or in a square baking dish in your oven.

The equipment I used for the Instant Pot pot-in-pot method was a deep 7 inch by 4 inch Fat Daddios pan* and my OXO sling/trivet*. If you’d like to learn more about pot-in-pot method read Pot-In-Pot Method Explained.

Description

This easy Instant Pot Breakfast Strata has only 8 ingredients and it tastes good for breakfast or dinner! 


Ingredients

Scale

Equipment needed: pan for pot-in-pot cooking* and sling/trivet*

  • 8 ounces cubes of bread (about 5–6 slices of bread)
  • 8 oz ground sausage
  • 1 cup diced onion
  • 1 medium green bell pepper, cored and diced
  • 1/2 cup shredded cheese of your choice
  • 4 eggs
  • 1/2 tsp ground mustard
  • Salt and pepper
  • 1/2 cup milk

Instructions

Instant Pot Instructions: 

  1. Spray your pot-in-pot dish with non-stick cooking spray. Pour 1 cup water into bottom of Instant Pot. 
  2. Add bread cubes to pot-in-pot dish.
  3. In a pan on the stove brown the ground sausage with the onions and green peppers. Drain off excess grease.
  4. Add the sausage on top of the bread. Sprinkle with cheese. 
  5. Beat the eggs with a whisk. Whisk in the ground mustard, milk and a bit of salt and pepper to taste. Pour the egg mixture over the cheese, sausage and bread.
  6. Place the dish on top of a sling. Lower the sling/trivet into the Instant Pot. 
  7. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button 25 minutes. When time is up move the valve to venting and remove the lid. 
  8. Serve the breakfast strata with salsa or a few drop of tabasco sauce. 

Slow Cooker Instructions: 

  1. Spray your slow cooker with non-stick cooking spray.
  2. Add bread cubes into slow cooker.
  3. In a pan on the stove brown the ground sausage with the onions and green peppers. Drain off excess grease.
  4. Add the sausage on top of the bread. Sprinkle with cheese. 
  5. Beat the eggs with a whisk. Whisk in the ground mustard, milk and a bit of salt and pepper to taste. Pour the egg mixture over the cheese, sausage and bread.
  6. Cover slow cooker and cook on high for 2-3 hours or on low for 4-6 hours. 
  7. Serve the breakfast strata with salsa or a few drop of tabasco sauce. 

Notes

For more flavor use a cheesy herbed bread. Stale bread works fine for this recipe and so does French bread or baguettes. 

You can prepare this dish the night before and bake the next morning. Cover the dish with plastic or foil and place in the fridge overnight. The next morning set it on the couther until it comes to room temperature. 

You can also bake in the oven in an 8×8 inch baking dish. Bake at 350 for 35 minutes. 

I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also use an 8 quart Instant Pot.

    Because of dietary restrictions on my carbs I would need to reduce the bread a bit. Would that really mess up the results?

      I bet it would be okay. Would you halve the bread amount? It might make it more eggy and less bread pudding-like

    My son can’t eat green peppers. Would this be good without the pepper, or is there a substitute that would be good?

    Just wondering if the recipes in your cookbook are all new recipes or ones on your website? I’m a widow on SS and can’t spend that much.

      In the video you used “5” eggs, however, the recipe calls for 4???

        they were medium eggs that’s why I used 5. If you use large eggs 4 is great.

    What kind of spray are you using on your Fat Daddio’s pan? I used canola spray and it stained the pan. Can’t wait to make this.

      I think mine was canola spray. my pan is beat up too but it still functions great!
