Garlic Butter Beef and Potatoes–a comforting Instant Pot or slow cooker meal made with tender beef stew meat, potatoes, rich garlic butter gravy and simple pantry spices.

Garlic Butter Beef and Potatoes

This dish is such a win because the potatoes cook right on top of the beef, so everything’s ready at the same time. The beef turns fork-tender, and that savory garlic butter gravy ties it all together perfectly. If you’re looking flavorful and convenient meat and potatoes dish, this is it. Of course, the meat lovers in my family devoured this one immediately. It disappears fast.

Ingredients/Substitution Ideas

  • Olive oil–or canola, vegetable oil
  • Beef stew meat–or chuck roast cut into chunks
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Ground thyme
  • Dried rosemary
  • Smoked paprika
  • Beef broth–or chicken broth, or water and Better than Bouillon beef base
  • Minced garlic–fresh or jarred (I use my garlic press*)
  • Butter
  • Worcestershire sauce
  • Russet potatoes–or Yukon gold potatoes
  • Milk–or half-and-half for richer potatoes
  • Cornstarch–flour

Steps

Season the beef stew meat with the 1 tsp salt, pepper, garlic powder, thyme, rosemary and smoked paprika. 

Heat Instant Pot (use the sauté setting) or a pan on the stove. Once hot add in the oil and swirl it around. 

Add in the beef (working in batches, as needed) and sear until browned on both sides. Add onions into the pan and saute for 4 minutes. 

Pour broth into Instant Pot and scrape bottom of pot so that nothing is sticking. 

Add in the garlic, butter and Worcestershire. Set the potatoes on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting (or you can do a full natural pressure release).

Move potatoes to a mixing bowl. Mash the potatoes and stir the milk and ½ tsp kosher salt into the potatoes.

Turn Instant Pot to sauté setting. Stir cornstarch together with 2 Tbsp cold water until smooth. Stir the slurry into the pot to thicken the gravy. 

Scoop potatoes onto a plate and top with some beef and gravy. Enjoy!

Instant Pot or Crockpot Garlic Butter Beef and Potatoes

Notes/Tips

  • Serve with green salad, steamed green beans, or roasted broccoli.
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Don’t skip searing the beef because it adds incredible depth of flavor.
  • For extra-creamy mashed potatoes, add an additional tablespoon of butter or a dollop of sour cream.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. The beef and gravy freeze well for up to 3 months, though the mashed potatoes are best made fresh as they can become grainy when frozen and reheated.
  • This recipe can be gluten free if you use gluten-free worcestershire sauce.

Description

A comforting Instant Pot or slow cooker meal made with tender beef stew meat, potatoes, rich garlic butter gravy and simple pantry spices. 


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 1/2 pounds beef stew meat
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 1/2 tsp ground thyme
  • 1/2 tsp dried rosemary
  • 1/4 tsp smoked paprika
  • 1/2 cup diced onions
  • 1 cup beef broth
  • 1 Tbsp minced garlic
  • 2 Tbsp butter
  • 2 tsp Worcestershire sauce
  • 2 1/2 lbs Russet potatoes, peeled whole
  • 2/3 cup milk
  • 1/2 tsp kosher salt
  • 2 Tbsp cornstarch

Instructions

Slow Cooker Instructions:

  1. Season the beef stew meat with the 1 tsp salt, pepper, garlic powder, thyme, rosemary and smoked paprika. 
  2. Heat a pan on the stove over medium high heat. Once hot add in the oil and swirl it around. 
  3. Add in the beef (working in batches, as needed) and sear until browned on both sides. Transfer to the slow cooker.  
  4. Add onions into the pan and saute for 4 minutes. Add onions into slow cooker.
  5. Add in the broth, garlic, butter and Worcestershire. Set the potatoes on top.
  6. Cover and cook on low for 3-4 hours. 
  7. Move potatoes to a mixing bowl. Mash the potatoes and stir the milk and ½ tsp kosher salt into the potatoes.
  8. Stir cornstarch together with 2 Tbsp cold water until smooth. Stir the slurry into the slow cooker. Turn slow cooker to high and cook without the lid until gravy thickens.
  9. Scoop potatoes onto a plate and top with some beef and gravy. Enjoy!

    My husband raved about this beef, and we all loved it. Easy to make with the potatoes on top, just mash them and add a vegetable on the side……with the beef, dinner is complete. Winner!

    Question: recipe says to remove the potatoes. Do you leave the stew meat in the pot while you’re making the gravy?
