One and One Casserole–a 5-ingredient dump-and-go beef recipe makes melt-in-your-mouth tender meat in a creamy, savory sauce. Make it in the Instant Pot or the slow cooker.

One and One Casserole

Greg and I ate the whole thing. I honestly didn’t expect it to be that good for how simple it was, but the sauce was so good I literally licked it off my plate. The beef gets nice and tender in the Instant Pot or Crockpot. Plus it only has 5 ingredients! I didn’t brown the meat or do anything fancy. I just dumped it all in and walked away. You’ll want to double it because it goes fast! (Recipe adapted from One and One Casserole on Food.com).

Ingredients/Substitution Ideas

  • Water–or beef stock
  • Beef stew meat–or a roast cut into cubes
  • Onion soup mix
  • Sour cream–or plain greek yogurt
  • Cornstarch

Steps

Pour water into Instant Pot. Add in the beef stew meat. Sprinkle the meat with the onion soup mix. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 

Add a half cup of the hot liquid in with the sour cream to temper it.

Turn Instant Pot to sauté setting. Stir cornstarch together with 2 Tbsp cold water until smooth. Stir the slurry into the pot to thicken the sauce. Once thickened turn off Instant Pot.

Stir in the sour cream mixture.

Serve beef and sauce over rice, noodles or mashed potatoes.

5-Ingredient Creamy Onion Beef (Dump & Go!)

Notes/Tips

  • Serve it over buttered egg noodles, fluffy mashed potatoes, or steamed rice. If you’re making it in an Instant Pot you can even make the rice at the same time using the pot-in-pot method (see instructions below).
  • Add mushrooms (fresh or canned) for more texture and flavor.
  • You don’t have to brown the meat (it still turns out delicious and tender) but you can if you want extra depth of flavor.
  • Make sure to double it if you’re feeding more than 2-3 people. Trust me, it disappears fast!
  • You can make this gluten free by using gluten-free onion soup mix.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Can I Make The Rice At The Same Time?

Pot-in-pot rice is a method of cooking rice in a separate container placed inside the Instant Pot. This method allows you to cook rice and the chicken at the same time. Here’s how you can cook rice at the same time as the chicken.

Ingredients:

  • 2 cup of white rice
  • 3 cups of water

Instructions:

  1. Add the rice to a heatproof container that fits inside the Instant Pot (I often use this stainless steel pan*). Add in the rice and water.
  2. Add the beef ingredients into the Instant Pot.
  3. Place the heatproof container with the rice into the Instant Pot using a tall trivet* to keep it elevated.
  4. Close the Instant Pot lid and set the valve to sealing. Cook as stated in the recipe card.
  5. Carefully remove the heatproof container with the rice from the Instant Pot. It will be perfectly cooked!

Note: You can use long grain white rice, converted rice, basmati rice, jasmine rice or brown rice.

Ingredients

  • 1 package onion soup mix
  • 1/2 cup sour cream
  • 2 Tbsp cornstarch

Slow Cooker Instructions:

  1. Stir water, beef and onion soup mix into slow cooker. 
  2. Stir cornstarch together with 2 Tbsp cold water until smooth. Stir the mixture into the slow cooker.
  3. Cover and cook on low for 4-6 hours or until beef is tender.
  4. Add a half cup of the sauce in with the sour cream to temper it. Stir the mixture into the slow cooker.
  5. Serve beef and sauce over rice, noodles or mashed potatoes.

Notes

Double if you’d like to serve 5-6 people.

    When you do pot-in-pot rice at the same time, do you cover the rice pot or leave it open? It won’t hurt the rice to cook 20 min? Thanks.

      you can leave it open. and it won’t hurt the rice to cook for 20 minutes.
