Dump and Marry Me Casserole–creamy orzo, tender shrimp, and sundried tomato pesto all cook together in the Instant Pot for an easy dinner that feels a little fancy but is super easy!

Dump and Marry Me Casserole
This recipe is adapted from Dump & Bake Marry Me Chicken Casserole from In the Kitchen With Momma Mel. I love this recipe because it was a dump and go recipe with only a 1 minute pressure cooking time! Plus I love shrimp and it was the perfect addition to this creamy pasta. The sundried tomato pesto adds the best flavor. This dish feels fancy-ish but is for real so fast and easy.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Frozen raw shrimp (peeled, deveined, tail off)
- Orzo
- Italian seasoning
- Garlic powder
- Onion powder
- Sundried tomato pesto–I found this in the pasta aisle by the pasta sauces
- Cream cheese
- Spinach–fresh or frozen
- Whole milk mozzarella cheese–I like Tillamook brand
Steps
Add broth into Instant Pot. Add in half of the shrimp. Sprinkle in the orzo. Lay the remaining shrimp on top. Dump in the Italian seasoning, garlic powder, onion powder, sundried tomato pesto and cream cheese.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the spinach and mozzarella.

Serve and enjoy!
