Description

Creamy orzo, tender shrimp, and sundried tomato pesto all cook together in the Instant Pot for an easy dinner that feels a little fancy but is super easy!


Ingredients

Scale
  • 2 cups chicken broth
  • 20 oz frozen raw shrimp (peeled, deveined, tail off)
  • 8 oz orzo
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup sundried tomato pesto
  • 4 oz cream cheese
  • 2 cups chopped spinach
  • 1/2 cup shredded whole milk mozzarella cheese

Instructions

  1. Add broth into Instant Pot. Add in half of the shrimp. Sprinkle in the orzo. Lay the remaining shrimp on top. Dump in the Italian seasoning, garlic powder, onion powder, sundried tomato pesto and cream cheese.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  3. Stir in the spinach and mozzarella. 
  4. Serve and enjoy!
