Instant Pot Beef Potato Casserole

Divine Casserole

Today’s recipe has a combination of creamy textures, bold seasonings, and melted cheese that creates a perfect blend of flavor that’s nothing short of heavenly. It’s going to make those meat and potato lovers in your house very happy. Yet again when I woke up this morning the leftovers were eaten and the empty dish was in the sink 😑.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Onion
  • Dried rosemary
  • Garlic powder
  • Italian seasoning
  • Kosher salt
  • Black pepper
  • Dried basil
  • Beef broth–or water and Better than Bouillon beef base
  • Russet potatoes–or red potatoes
  • Cajun seasoning
  • Worcestershire sauce
  • Tomato sauce
  • Sugar
  • Hot sauce
  • Cream cheese
  • Colby jack cheese–or cheddar

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions and brown for about 5 minutes. Drain off excess grease. Stir in the rosemary, garlic powder, Italian seasoning, salt, pepper and basil. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the potatoes and sprinkle them with the Cajun seasoning. Dump the Worcestershire, tomato sauce, sugar, hot sauce and cream cheese on top. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.

Gently stir. Sprinkle the cheese on top and let it melt.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad, roasted green beans or asparagus.
  • This recipe can be gluten free if you use gluten-free Worcestershire sauce.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. I don’t suggest freezing this…the potatoes get a little weird and break down.

Description

Seasoned ground beef and potatoes with cream cheese and colby jack made fast in the Instant Pot. 


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/4 tsp dried rosemary
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil
  • 3/4 cup beef broth
  • 4 medium Russet potatoes (about 1 1/2 pounds), peeled and cubed
  • 1/2 tsp Cajun seasoning
  • 1 tsp Worcestershire sauce
  • 8 ounces tomato sauce
  • Pinch of sugar
  • 1/2 tsp hot sauce
  • 2 ounces cream cheese
  • 1 cup shredded Colby jack cheese

Instructions

    how can you make this recipe in a slow cooker? I don’t have a insta pot and would like to be able to make it.

      I haven’t tried this one in the slow cooker but if I did here is how I would make it:
      1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions and brown for about 5 minutes. Drain off excess grease. Stir in the rosemary, garlic powder, Italian seasoning, salt, pepper and basil. Transfer to slow cooker.
      2. Add in the broth, potatoes, Cajun seasoning, Worcestershire, tomato sauce, sugar, hot sauce and cream cheese. Stir a little.
      3. Cover and cook on high for 2-3 hours or until potatoes are cooked through.
      4. Gently stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!
