Description

Seasoned ground beef and potatoes with cream cheese and colby jack made fast in the Instant Pot. 


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/4 tsp dried rosemary
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil
  • 3/4 cup beef broth
  • 4 medium Russet potatoes (about 1 1/2 pounds), peeled and cubed
  • 1/2 tsp Cajun seasoning
  • 1 tsp Worcestershire sauce
  • 8 ounces tomato sauce
  • Pinch of sugar
  • 1/2 tsp hot sauce
  • 2 ounces cream cheese
  • 1 cup shredded Colby jack cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions and brown for about 5 minutes. Drain off excess grease. Stir in the rosemary, garlic powder, Italian seasoning, salt, pepper and basil. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the potatoes and sprinkle them with the Cajun seasoning. Dump the Worcestershire, tomato sauce, sugar, hot sauce and cream cheese on top. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.
  5. Gently stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!
