Sigma Casserole–an Instant Pot one pot meal with potatoes, ground beef, taco seasonings and Rotel tomatoes. Don’t forget your favorite toppings!

Sigma Casserole

When asked what he thought about this dish my 16-year-old son said, “sigma.” It’s a dumb word that is now being used by middle schoolers and teens to signify something cool (cool is the word I would have used in my day). Haha! But in the sense of whether or not he liked this meal it definitely is a good thing. This is kind of like a taco casserole with potatoes. It’s got a ton of flavor and you’ll love adding the mild pickled jalapenos on top for some extra kick and a bit of sour cream tastes so good with the potatoes. Have fun with the toppings and make your dish your own. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef
  • Dried minced onion–or half cup fresh chopped onion
  • Kosher salt
  • Pepper
  • Garlic powder
  • Cumin
  • Chili powder
  • Smoked paprika
  • Beef or chicken broth–or water and Better than Bouillon
  • Red potatoes–or peeled Russet potatoes
  • Campbells cheddar cheese soup–or nacho cheese soup
  • Rotel–I used mild
  • Toppings: diced avocado, tamed pickled jalapenos, diced tomatoes, sour cream, cilantro

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in a pinch of salt, pepper, cumin, chili powder and smoked paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes. Top the potatoes with the soup and rotel. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir.

Scoop onto plates and top with all your favorite toppings.

Notes/Tips

  • Serve with shredded lettuce.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with pickled jalapenos are Haystack Supper and Jalapeno Popper Chicken.
  • You can also use 4 ounces of Velveeta cheese in the place of the cheddar soup.

Description

Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp dried minced onion
  • Kosher salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Pinch of smoked paprika
  • 1 cup beef or chicken broth
  • 1 1/2 pounds red potatoes, cut into 3/4 inch cubes
  • 1 (10.5 oz) can Campbells cheddar cheese soup
  • 1 (10 oz) can Rotel (I used mild)
  • Toppings: diced avocado, tamed pickled jalapenos, diced tomatoes, sour cream, cilantro

Instructions

    Can this be done in a crockpot?

      You could. However you’ll need to brown the beef and onions on the stove top prior to adding everything into the crockpot. And then you’ll want to slow cook on low for 3-4 hours, or until potatoes are soft.
