Description

Ham cubes with rice, sweet corn, spinach and cheddar. An easy Instant Pot one-pot-meal.


Ingredients

  • 1 Tbsp butter
  • 1/2 cup diced onion
  • 8 ounces ham cubes
  • 1 1/2 cups chicken broth
  • 1 cup converted rice
  • 2 Tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2 ounces cream cheese
  • 1 (12 oz) package sweet corn
  • 2-3 cups chopped spinach
  • 1/2 cup sharp shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and saute for 2 minutes. Add in the ham and saute for 2 more minutes. Turn off the Instant Pot.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Sprinkle in the rice. Then add in the Dijon, garlic powder, pepper, paprika and cream cheese.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the corn, spinach and cheese. 
  6. Serve and enjoy!
