Glacier Casserole–a ham, hashbrown, egg and cheese breakfast casserole made in the slow cooker or baked in the oven.

Glacier Casserole
This easy slow cooker breakfast bake has lots of flavor and is an easy dump and press start recipe. We love eating breakfast for dinner so this was a delicious fast Sunday dinner. Before I go to church I love throwing something in the slow cooker and then when I get home my dinner is ready and waiting. Remember that cooking times may vary depending on your slow cooker. If you’d like you can also bake this casserole in the oven. We served this with a fruit salad, green salad and some cornbread.
This recipe has been adapted from Glacier Breakfast Bake recipe in the Best of the Best from the Plains Cookbook Cookbook. I made my version in the slow cooker and instead of using Bisquick I used a homemade mix of flour, salt, baking powder and butter.
Ingredients/Substitution Ideas
- Ham cubes–you can also use cooked sausage crumbles
- Frozen hashbrown potatoes–shredded or cubes
- Mushrooms
- Diced green chiles
- Onion powder
- Garlic powder
- Kosher salt
- Black pepper
- Colby jack cheese–or cheddar cheese
- Milk–or evaporated milk
- Eggs
- All purpose flour
- Baking powder
- Salt
- 3 Tbsp Butter
Steps
Spray inside of slow cooker with non-stick cooking spray.
Add in the ham, hashbrowns, mushrooms, green chiles, onion powder, garlic powder, kosher salt, black pepper and 1 cup of the cheese.

Stir well.

In a bowl whisk together the milk, eggs, flour, baking powder and salt. Cut the butter in until mixture is crumbly.

Pour over the hashbrown mixture. Sprinkle with the remaining cheese.

Cover and cook on low for 3-4 hours.

Serve and enjoy topped with salsa or ketchup.

Notes/Tips
- Serve with fresh fruit like strawberries or orange slices. I like serving this as breakfast for dinner but this would make a great brunch recipe too.
- Instead of using the flour, baking powder, salt and butter you can use 1 cup of bisquick baking mix.
- Feel free to add in sauteed bell peppers or other vegetables you like.
- I used a 6 quart slow cooker made by Ninja.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 8 ounces ham cubes
- 12 ounces frozen hashbrown potatoes
- 1 cup sliced mushrooms
- 1 (4 oz) can green chiles
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 2 cups shredded colby jack cheese, divided
- 2 cups milk
- 4 eggs
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3 Tbsp butter
Instructions
Slow Cooker Instructions:
- Spray inside of slow cooker with non-stick cooking spray.

Oven Instructions:
- Spray a 9×13 inch pan with non-stick cooking spray.
- In a bowl stir together the ham, hashbrowns, mushrooms, green chiles, onion powder, garlic powder, kosher salt, black pepper and 1 cup of the cheese. Add to the pan.
- In a bowl add the flour, baking powder and salt. Cut the butter into the mixture until crumbly. Whisk in the milk and eggs. Pour over the hashbrown mixture.
- Sprinkle with the remaining cheese.
- Bake at 375 for 45 minutes.
- Serve and enjoy topped with salsa or ketchup.

I would use the highest slow cooker setting and cook for 3-4 hours.
