Cuban Casserole

Cuban Casserole–everything you love about a Cuban sandwich! Tender pork, smoky ham, tangy pickles, mustard and melty cheese are tossed together in a creamy, comforting pasta made easy in the Instant Pot.

Cuban Casserole

This dish is like a Cuban sandwich in pasta form! With the Instant Pot you can cook pork until tender (you can also use leftover pulled pork instead). Then you’ll add in the pasta, ham and other ingredients and cook quickly. The result is a creamy, cheesy pasta with pickles, pork and ham. This dish had lots of flavor and my family really enjoyed it. You can easily halve this recipe to serve 4.

Ingredients/Substitution Ideas

  • Pork Shoulder Steaks–mine is called pork carnitas at Winco
  • Chicken Broth–or water and Better than Bouillon chicken base
  • Kosher Salt
  • Cavatappi Pasta–or penne
  • Dijon Mustard
  • Black Pepper
  • Garlic Powder
  • Ham Steak–or leftover ham, diced
  • Diced Dill Pickles
  • Heavy Cream–or half-and-half
  • Shredded Italian Blend Cheese–or mozzarella blend or swiss
  • Yellow Mustard

Steps

Pour broth into Instant Pot. Add in the pork and the salt. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Move pork to a cutting board and shred or chop. Set aside.

Add pasta into Instant Pot with the broth. 

Add in the dijon, pepper, garlic powder and ham.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the pork, pickles, heavy cream, cheese and yellow mustard.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad.
  • I used my 4 quart pot but it was a bit too small by the time I stirred in the cheese. So I suggest using a 6 or 8 quart Instant Pot*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 24 oz pork shoulder steaks
  • 4 cups chicken broth
  • 1 tsp kosher salt
  • 16 oz cavatappi pasta
  • 1 Tbsp dijon mustard
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 16 oz ham steak, cut into cubes
  • 1 cup diced dill pickles
  • 1/2 cup heavy cream
  • 1 cup shredded Italian blend cheese
  • 1 Tbsp yellow mustard

Instructions

    can I sub pork chops for the pork steak?

      Yes I think that would work fine. I would cut the pork into cubes and forego the initial cooking time of the pork. So just add the broth, pasta and other ingredients and pressure cook for 4 minutes.

    How much cheese and what kind ? It doesn’t have it listed in the ingredients but in the recipe it says add cheese.

      Hi Michelle, it’s listed as 1 cup Italian style blend cheese. you can also do a combo of mozzarella and parmesan
