Cuban Casserole–everything you love about a Cuban sandwich! Tender pork, smoky ham, tangy pickles, mustard and melty cheese are tossed together in a creamy, comforting pasta made easy in the Instant Pot.

Cuban Casserole
This dish is like a Cuban sandwich in pasta form! With the Instant Pot you can cook pork until tender (you can also use leftover pulled pork instead). Then you’ll add in the pasta, ham and other ingredients and cook quickly. The result is a creamy, cheesy pasta with pickles, pork and ham. This dish had lots of flavor and my family really enjoyed it. You can easily halve this recipe to serve 4.

Notes/Tips
- Serve with a green salad.
- I used my 4 quart pot but it was a bit too small by the time I stirred in the cheese. So I suggest using a 6 or 8 quart Instant Pot*.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
- Other recipes you can make with dijon mustard are Instant Pot Dijon Chicken and Instant Pot Coca Cola Chicken.
