Instant Pot Coca Cola Chicken

This chicken has great flavor and is super fast and easy to make. It is sweet, but not overly sweet. You’re going to love this chicken by itself or serving it shredded on slider buns.

  • Chicken tenders pressure cook in 5 minutes in the Instant Pot. They seem to stay more moist and tender than whole chicken breasts.
  • If you’d prefer you can use chicken breasts or thighs in this recipe. For fresh use a 12 minute pressure cook time and for frozen use a 15 minute pressure cook time. Shred the meat and stir it together with the BBQ/Cola sauce. This is perfect for serving sandwiches to a crowd!
  • I haven’t tried this recipe with Diet Coke but I assume it would work. You can also make this recipe with Dr. Pepper or Pepsi.
  • This chicken tastes great served with baked potatoes and steamed broccoli.
  • If you shred this chicken it freezes well in an airtight container for up to 3 months.
  • I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also make this in a 3 or 8 quart pot with no changes.

Description

A delicious and simple dump and go 4-ingredient chicken recipe with Coca Cola. This recipe couldn’t get any easier!

Ingredients

Scale
  • 2 pounds chicken tenderloins
  • 2 cups coca cola (divided)
  • 1/2 cup Sweet Baby Ray’s BBQ Sauce
  • 1 Tbsp Dijon mustard

Instructions

Instant Pot Instructions:

  1. Pour 1 ½ cups of cola into Instant Pot. Nestle the chicken tenderloins into the Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  3. Drain the liquid in the pot and discard.
  4. In a bowl, whisk together the remaining ½ cup of coca cola, BBQ sauce and Dijon mustard. Pour the mixture over the chicken.
  5. Serve and enjoy or let the chicken sit in the pot on warm until ready to serve.

Slow Cooker Instructions:

  1. Pour 1 ½ cups of cola into slow cooker. Nestle the chicken tenderloins into the slow cooker.
  2. Cover and cook on low 3-4 hours.
  3. Drain the liquid in the slow cooker and discard.
  4. In a bowl, whisk together the remaining ½ cup of coca cola, BBQ sauce and Dijon mustard. Pour the mixture over the chicken. Let cook on low for another 15 minutes.
  5. Serve and enjoy or let the chicken sit in the pot on warm until ready to serve.

Notes

You can also make this with whole chicken breasts or chicken thighs. Pressure cook for 12-15 minutes with a 10 minute natural pressure release for breasts or thighs. Then shred the chicken. This is perfect for sandwiches or sliders!

I used frozen chicken and it turned out great. It’s so easy AND quick AND delicious, it is a “winner winner chicken dinner”. Thanks for sharing!

I made this for dinner tonight. Shredded it for BBQ sandwiches with cole slaw. It was very tasty. I love easy IP recipes, especially ones with few ingredients. I’ll make this again using Dr Pepper instead of coke, just for a for a flavor change.

Can you use Coke Zero, or is the sugar necessary for the cooking?
