Instant Pot Celestial Beef Roast
If you’re a fan of easy cooking this is the recipe for you! You add a few ingredients into the pot and you’re on your way to a roast beef dinner. This recipe turns out equally well in the Instant Pot or the Crockpot. Both instructions are listed in the recipe card below.
My family loved this roast and gravy! At first I thought the gravy was quite salty. My family disagreed and said it was perfect. Once the gravy was on top of mashed potatoes I did agree with them! You can always add extra water to make the gravy less strong if needs be! Really, it depends on what brand of packets you use. Some store brands are a little saltier than others.
I do think serving mashed potatoes with this roast and gravy is a must! It just makes the meal complete. I cheated and used instant mashed potatoes but you can easily make homemade mashed potatoes. If you’d like to interrupt the pressure cooking time when there is about 25 minutes let you can add in some whole peeled potatoes with the roast. Then after the pressure cooking time is up use tongs to move them to a bowl and mash them with some butter and milk. Or you can always make mashed potatoes in a separate Instant Pot if you have one.
Ingredients/Substitution Ideas
- Chuck roast–you can also use a rump roast or cross rib roast
- Hidden Valley Ranch dry salad dressing mix
- Brown gravy mix–I like the McCormicks brand
- Italian dressing mix–I like the Good Seasons brand
- Cornstarch–to thicken the gravy
Steps
Place roast and water into Instant Pot.

In a bowls stir together the ranch mix, brown gravy mix and Italian dressing mix.

Sprinkle it over the top of the roast.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 75 minutes. When time is up let pot sit for 15-20 minutes and then move valve to venting. Remove the lid.

Place roast on a cutting board.
Turn Instant Pot to saute setting. In a small bowl stir together the cornstarch and 3 tablespoons of water. Stir the slurry into the pot. Once gravy has thickened turn off Instant Pot.

Slice or shred roast and serve with gravy.

Notes/Tips
- Serve with mashed potatoes and a side of vegetables like green beans, corn or peas.
- For a lower sodium version of this recipe use low sodium packets of brown gravy and dressing mixes.
- For an even better tasting roast brown the roast before pressure cooking in a bit of oil using the saute setting.
- Sometimes I like to quarter my roast. It turns out even more tender and you can decrease the cooking time to 60 minutes.
- For cooking a frozen roast increase cooking time to 90 minutes.
- Don’t forget the natural pressure release! It will help the meat remain tender.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 (1 oz) package Hidden Valley Ranch salad dressing mix
- 1 (.87 oz) package brown gravy mix
- 1 (.70 oz) package Italian dressing mix
- 2 Tbsp cornstarch
Instructions

- Place roast and water into Instant Pot.

- Cover and cook on low for 8-10 hours, or until roast is tender.
- Place roast on a cutting board.
- Turn slow cooker to high setting. In a small bowl stir together the cornstarch and 3 tablespoons of water. Stir the slurry into the slow cooker. Let gravy thicken for about 10 minutes.
- Slice or shred roast and serve with gravy.
Notes
You can also use a rump roast. Increase pressure cooking time to 90 minutes.

With a name like ‘celestial roast beef”, how could I not make this asap? So I did, and it was as delicious as the name implies. I used a 2 1/2 lb. chuck roast that fit my 3 qt. IP perfectly and the seasoning/gravy packages that you named, ensuring accurate ingredient weights and higher quality ingredients. The gravy alone does run a bit salty, but as soon as you add it to the mashed potatoes and the meat, that extra saltiness simply vanishes. This gravy and roast lived up to its name, and the real revelation for me was how I could make a good gravy using that combination of seasonings/gravy mixes.

Nice but I’m tired of the taste of chuck roast. What about a rump roast or a sirloin steak in the instant pot since constant grilling isn’t good for us.
