Budget Casserole–a quick and easy one-pot Instant Pot meal with seasoned ground beef, rice, tomatoes, and green chiles for a Tex-Mex-inspired dinner. Easy on your wallet and your time budget too!

Budget Casserole

After tax day I’m feeling poor…time for a budget dinner! This easy recipe has ingredients you’re likely to have on hand. Shopping out of your pantry and freezer is the best way to save money. Plus this recipe is fairly inexpensive, especially if you can find your ground beef on sale. Whenever ground beef goes on sale I stock up and freeze it. You can also use ground turkey or ground pork instead.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey, ground pork
  • Onion–or shallot, or 2 Tbsp of dehydrated onion flakes
  • Kosher salt
  • Black pepper
  • Garlic powder–or 2 large garlic cloves, minced
  • Chili powder
  • Beef broth–or water and Better than Bouillon beef base
  • Converted rice–or long grain white rice
  • Crushed tomatoes–I like crushed the best for this recipe but you can also use canned diced tomatoes
  • Diced green chiles–I use mild

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and chili powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice. Dump the tomatoes and green chiles evenly over the rice. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 

Stir and serve. You may like a bit of shredded cheddar cheese on top or a dollop of sour cream.

Notes/Tips

  • Serve with steamed broccoli or a green salad.
  • This recipe is gluten free and dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. This recipe is easy to double.
  • You may like a bit of shredded cheddar cheese on top or a dollop of sour cream.
  • Try using a pound of Italian sausage instead of beef. Leave out the salt if you use sausage.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 1/2 cups beef broth
  • 1 cup converted or long grain white rice
  • 1 (15 oz) can crushed tomatoes
  • 1 (4 oz) can diced green chiles

Instructions

    Could this be made using Rotel vs the crushed tomatoes and green chilies? If so, would one 10 oz can be enough?

    I have made this using the stated recipe and it was delicious. However, sometimes I don’t have the crushed tomatoes and green chilies on hand.

    Made this for supper tonight. Very good but on the spicy side. We really enjoyed it. Added a package of frozen corn to the Instant Pot before the tomatoes. Thank you for the recipe!
