Description
A quick and easy one-pot Instant Pot meal with seasoned ground beef, rice, tomatoes, and green chiles for a Tex-Mex-inspired dinner. Easy on your wallet and your time budget too!

- 1 pound lean ground beef
- 1 small onion, diced
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 2 tsp chili powder
- 1 1/2 cups beef broth
- 1 cup converted or long grain white rice
- 1 (15 oz) can crushed tomatoes
- 1 (4 oz) can diced green chiles
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and chili powder.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Dump the tomatoes and green chiles evenly over the rice.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
