Description

A quick and easy one-pot Instant Pot meal with seasoned ground beef, rice, tomatoes, and green chiles for a Tex-Mex-inspired dinner. Easy on your wallet and your time budget too!


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 1/2 cups beef broth
  • 1 cup converted or long grain white rice
  • 1 (15 oz) can crushed tomatoes
  • 1 (4 oz) can diced green chiles

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and chili powder.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Dump the tomatoes and green chiles evenly over the rice. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir and serve.
