Big Game Casserole–a one-pot Instant Pot or slow cooker meal with smoked sausage, tender potatoes, and cabbage in a tomato sauce with a sprinkle of parmesan.

Big Game Casserole
This one’s just straight-up good. It’s smoky, saucy, and super satisfying. It’s filling and makes your kitchen smell amazing without being a big hassle. Throw some parm on top and you’re golden. We at this one until is was gone. It would have been really good with some crusty bread to sop up the savory tomato sauce. (This recipe is adapted from Big Game Pizza Casserole).
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Elk smoked sausage–or beef smoked sausage
- Onion
- Beef broth–or chicken broth or Better than Bouillon and water
- Cabbage
- Potatoes–I used Russet
- Kosher salt
- Black pepper
- Italian seasoning
- Garlic powder
- Tomato sauce
- Parmesan cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown on each side for 2-3 minutes. Stir in the onions and saute for 3 minutes.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the shredded cabbage and potatoes. Sprinkle the potatoes with the salt, pepper, Italian seasoning and garlic powder. Dump tomato sauce on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir.

Serve top with parmesan cheese.

Notes/Tips
- Serve with crusty bread or garlic toast and a side of sauteed spinach.
- This recipe is gluten free. It can be dairy free if you don’t add parmesan cheese on top.
- Use pre-shredded coleslaw mix as a shortcut if you don’t want to shred cabbage.
- Use smoked paprika for extra depth. Add in ¼ tsp with the other seasonings.
- Don’t stir before cooking. Layering the tomato sauce on top prevents sticking or burning during pressure cooking.
- Try adding in a handful of fresh or frozen green beans when you add in the potatoes for some extra veg.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- Parmesan cheese, for topping

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown on each side for 2-3 minutes. Stir in the onions and saute for 3 minutes. Transfer to slow cooker.
- Stir in the broth, shredded cabbage, potatoes, salt, pepper, Italian seasoning, garlic powder and tomato sauce.
- Cover and cook on low for 3-4 hours, or until potatoes are tender.
- Gently stir.
- Serve top with parmesan cheese.
