Description
A one-pot Instant Pot or slow cooker meal with smoked sausage, tender potatoes, and cabbage in a tomato sauce with a sprinkle of parmesan.
Ingredients

- 1 Tbsp olive oil
- 12 ounces elk smoked sausage (or beef smoked sausage), sliced
- 1 cup diced onion
- 1/2 cup beef broth
- 2 cups shredded cabbage
- 3 medium small potatoes, peeled and cut into cubes
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 (8 oz) can tomato sauce
- Parmesan cheese, for topping
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown on each side for 2-3 minutes. Stir in the onions and saute for 3 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the shredded cabbage and potatoes. Sprinkle the potatoes with the salt, pepper, Italian seasoning and garlic powder. Dump tomato sauce on top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Gently stir.
- Serve top with parmesan cheese.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown on each side for 2-3 minutes. Stir in the onions and saute for 3 minutes. Transfer to slow cooker.
- Stir in the broth, shredded cabbage, potatoes, salt, pepper, Italian seasoning, garlic powder and tomato sauce.
- Cover and cook on low for 3-4 hours, or until potatoes are tender.
- Gently stir.
- Serve top with parmesan cheese.
