Description

A one-pot Instant Pot or slow cooker meal with smoked sausage, tender potatoes, and cabbage in a tomato sauce with a sprinkle of parmesan.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 12 ounces elk smoked sausage (or beef smoked sausage), sliced
  • 1 cup diced onion
  • 1/2 cup beef broth
  • 2 cups shredded cabbage
  • 3 medium small potatoes, peeled and cut into cubes
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 (8 oz) can tomato sauce
  • Parmesan cheese, for topping

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown on each side for 2-3 minutes. Stir in the onions and saute for 3 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the shredded cabbage and potatoes. Sprinkle the potatoes with the salt, pepper, Italian seasoning and garlic powder. Dump tomato sauce on top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Gently stir.
  6. Serve top with parmesan cheese. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown on each side for 2-3 minutes. Stir in the onions and saute for 3 minutes. Transfer to slow cooker.
  2. Stir in the broth, shredded cabbage, potatoes, salt, pepper, Italian seasoning, garlic powder and tomato sauce.
  3. Cover and cook on low for 3-4 hours, or until potatoes are tender.
  4. Gently stir.
  5. Serve top with parmesan cheese.
