- Red potatoes–or yukon gold
- Red bell pepper–or another color bell pepper

Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for about 2-3 minutes on each side.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the chicken thighs, red potatoes and bell peppers. Sprinkle the salt, pepper garlic powder, italian seasoning and paprika into the pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir and serve.

Notes/Tips
- Serve with crusty bread to sop up the sauce. Add in some spinach for some greens.
- Try adding in some sliced mushrooms when you add in the chicken.
- Will the bell peppers be too soft after pressure cooking? They do get quite soft. If you prefer a different texture you can quickly sauté the bell peppers in a pan before serving and stir them in at the end for a bit of crunch.
- Can I thicken the broth to make more of a sauce? Yes. After pressure cooking, mix 1-2 tablespoons of cornstarch with 2 tablespoons of cold water in a small bowl. Turn the Instant Pot to Sauté mode and stir in the slurry. Let it simmer for 1-2 minutes until the sauce thickens.
