Bachelor Casserole–with only a few ingredients and a couple minutes you can be enjoying this rice, sausage and beans dish with the help of your Instant Pot.

Bachelor Casserole
This is a budget-wise, easy, quick way to feed a group of four to six people (or one person with some leftovers for lunches). It’s only got 5 main ingredients and requires very little cooking skill. You’ll love the flavor thanks to the andouille sausage and the rice seasoning mix. This is a perfect recipe for a bachelor to make for himself if he wants to switch it up from the regular ramen or mac n cheese 😉
Ingredients/Substitution Ideas
- Olive oil–or canola oil
- Andouille sausage–or beef smoked sausage
- Water
- Zatarain’s Jambalaya rice mix
- Black beans–pinto beans
- Rotel tomatoes–I used mild
- Frozen sweet corn–or a can of corn
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown for a couple minutes on each side.

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice mix. Dump in the beans, Rotel and corn.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Gently stir and serve.

Notes/Tips
- Serve with a dollop of sour cream. Green beans or broccoli make a nice veggie side dish.
- To make this recipe even more minimalized you can leave out the corn, Rotel and beans if you’d like. Really you only need the sausage, water and rice mix. Keep the cooking time the same.
- This recipe is gluten free.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- If you’d like to make this on the stove top instead of the Instant Pot: make the rice mix as stated on the package. In a separate pan brown the sausage in the oil over medium high heat. Stir in the corn, tomatoes, beans and heat through. Stir in the rice once it has cooked. Serve.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

I made this tonight without the instant pot because I do not own one as of yet. however this dish was very good. I love jambalaya as does my family. so this was a yes from my family. will defend be making this dish again.
