Summer is here! It’s fun to spend time at the lake or the cabin but cooking when you’re there is probably not what you want to spend your time doing! Plus bringing up a bunch of ingredients to the lake house is a pain. This easy Instant Pot dinner with rice, beans, ground beef and salsa verde has tons of flavor and it’s so easy to make. With only a handful of easy ingredients and your Instant Pot you can be eating in just a few minutes. I loved adding the tortilla chips, tomatoes and sour cream on top too. We downed this dinner and it will definitely be something we bring up to our lake cabin this summer! I hope you love it as much as we did!

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Cumin
  • Kosher salt
  • Garlic powder
  • Chili powder
  • Chicken broth–or beef broth
  • Converted rice–or long grain white rice
  • Black beans–or pinto beans
  • Frozen sweet corn–or canned corn
  • Herdez salsa verde–I always use mild
  • Colby jack cheese–or cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for about 5 minutes. Drain off excess grease. Stir in the cumin, salt, garlic powder and chili powder. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice. Dump the beans, corn and 1 cup of the salsa on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes then move valve to venting and remove the lid.

Stir in the cheese and remaining half cup of salsa.

Scoop onto plates and serve with desired toppings.

Notes/Tips

  • Serve with a shredded lettuce and tomatoes and fresh fruit. A side of cornbread is always welcome.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Serve a crowd! Double the recipe by doubling all ingredients but keeping the cooking time the same.
  • This is a great recipe for lunch prep the next few days!
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 tsp cumin
  • 1/4 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 1/2 cups chicken or beef broth
  • 1 cup converted rice
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen sweet corn
  • 1 1/2 cups Herdez salsa verde (mild), divided
  • 2 ounces shredded colby jack cheese
  • Toppings: tortilla chips, sour cream, green onion or cilantro

    Hi 😊 👋🏾

    This looks delicious and I’d like to try it, but I don’t have an instant pot at the moment. 😕 I was wondering how you’d make this on the stove. 🤔 Or what the cooking time would be I supposed, since I assume all the other steps would be the same. Thank you!
