Luke Bryan Casserole

Today’s recipe is my Instant Pot take on Luke Bryan’s favorite casserole. I loved this dish! I will definitely be making this again. Yellow rice with seasonings are accompanied by diced tomatoes, green chilies, bell pepper, carrots, black beans and melty cheese. I accidentally left out the chicken that I intended to add into the pot but I was so happy with the meatless result. You can definitely add in the chicken if you’d like! Add in chunks of raw chicken with the rice or you can add in rotisserie chicken that has been chopped up. This beans and rice dish is also perfect as leftovers for lunch the next couple of days. I liked mine with a dollop of sour cream on top. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or canola, vegetable
  • Onion–or yellow, white
  • Water
  • Zatarain’s yellow rice–or another brand of yellow rice with seasonings
  • Carrot–or peeled sweet potato
  • Green bell pepper–or red bell pepper
  • Black beans–or pinto beans
  • Rotel–I used mild Rotel. Rotel is usually found next to diced tomatoes at the grocery store. It is diced tomatoes with green chiles and seasonings in it.
  • Colby and monterey jack blend–or shredded cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute until softened. 

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Sprinkle in the rice mix.

Then dump in the carrot, pepper, beans and Rotel. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the cheese.

Salt and pepper to taste and serve.

Notes/Tips

  • Serve with a dollop of sour cream.
  • This recipe is gluten free.
  • You can add chopped cooked chicken to this dish to beef it up a bit. You can also add in uncooked chicken that has been cut into cubes.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • This recipe can be doubled for a crowd. Double all ingredients and keep cooking time the same.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with green bell pepper are poor man’s casserole and sloppy ottos.

Description

Yellow rice, black beans, Rotel tomatoes and cheese made fast in your Instant Pot. 


Ingredients

Scale
  • 1 1/2 tsp olive oil
  • 1/2 cup diced onion
  • 2 cups water
  • 1 (6.9 oz) package Zatarain’s yellow rice
  • 1 large carrot, large dice
  • 1/2 green bell pepper, diced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can Rotel
  • 1 cup shredded colby and monterey jack blend

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute until softened.

  5. Stir in the cheese. Salt and pepper to taste and serve.

    Tried this and it was very good. A question though….in the ingredients list recipe calls for 2 cups of water but in the instructions, broth is mentioned. I used water and it was tasty but should I have used broth? Thanks for the many great recipes!

      oops! That is a typo. It is supposed to be water. Since the seasoning packet has bouillon in it you can just use water. I have corrected it.
