Description

With only a few ingredients and a couple minutes you can be enjoying this rice, sausage and beans dish with the help of your Instant Pot.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package andouille sausage, sliced into quarter inch rounds
  • 2 cups water
  • 1 (8 oz) package Zatarain's Jambalaya rice mix
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can Rotel tomatoes
  • 1 cup frozen sweet corn

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown for a couple minutes on each side. 
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice mix. Dump in the beans, Rotel and corn.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Gently stir and serve.
