Description
With only a few ingredients and a couple minutes you can be enjoying this rice, sausage and beans dish with the help of your Instant Pot.

- 1 Tbsp olive oil
- 1 (12 oz) package andouille sausage, sliced into quarter inch rounds
- 2 cups water
- 1 (8 oz) package Zatarain's Jambalaya rice mix
- 1 (15 oz) can black beans, rinsed and drained
- 1 (10 oz) can Rotel tomatoes
- 1 cup frozen sweet corn
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown for a couple minutes on each side.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice mix. Dump in the beans, Rotel and corn.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
