This easy 5 ingredient Instant Pot casserole recipe with chicken and stuffing. It’s a family favorite.

- 1 1/4 pounds (20 oz) boneless or bone-in, skinless chicken thighs and/or breasts (or 2 cups of chopped rotisserie chicken)
- 1 tsp rotisserie chicken seasoning
- 1 1/4 cups chicken broth
- 1 (6 oz) package stove top stuffing mix (chicken flavor)
- 1/2 cup sour cream
Instructions
- Add chicken into Instant Pot. Sprinkle with the rotisserie chicken seasoning. Pour the broth into Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes for fresh chicken or 12 minutes for frozen chicken or bone-in chicken pieces. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Remove chicken out of the pot and chop.
- Sprinkle the stuffing mix into the broth in the Instant Pot. Replace the lid. Keep the Instant Pot on warm setting. Let it sit for 5 minutes.
- Remove the lid. Fluff with a fork. Gently stir in the chicken and sour cream. Serve and enjoy.
Notes
To make with rotisserie chicken: skip to step 3. And then in step 4 bring the broth to a boil using the sauté setting before adding in the stuffing mix. Once broth has boiled turn Instant Pot to keep warm setting and sprinkle in the stuffing mix and place lid on top of pot for 5 minutes. Follow recipe as stated from that point.
