Instant Pot or Slow Cooker Amish Country Potato Soup

Amish Country Potato Soup

This easy soup is very unassuming but turned out so delicious. There were no leftovers in my fridge when I looked the next day, unfortunately! I adapted this recipe from Amish Country Potato Soup on Food.com. The contributor stated, “This is a recipe I got from my grandma, whose dishes have left a lasting memory with everyone who has ever eaten her food. This is a very rich, hearty soup that is super easy and my entire family enjoys.” She also mentions that the Worcestershire sauce is “very important”! So don’t forget it. If you’re looking to make this gluten free you can easily make it so by using gluten free Worcestershire.

Ingredients/Substitution Ideas

  • Thick Cut Bacon
  • Diced Onion
  • Celery
  • Chicken Broth–or water and Better than Bouillon chicken base
  • Russet Potatoes
  • Worcestershire Sauce
  • Dried Parsley
  • Black Pepper
  • Celery Salt
  • Garlic Powder
  • Bay Leaf
  • Evaporated Milk
  • Kosher Salt

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move bacon pieces to a paper towel lined plate. Discard all but 1 Tbsp of the bacon fat.

Add the onion and celery into the pot with the 1 Tbsp of bacon fat. Sauté for 4 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking.

Add in the potatoes, Worcestershire, parsley, pepper, celery salt, garlic powder and bay leaf.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 2 minutes. When time is up let pot sit 5 minutes and then move valve to venting. Remove the lid.

Discard bay leaf. Mash the potatoes lightly, leave about ¼ whole.

Stir in the evaporated milk and warm through on the sauté setting. Taste test and add salt as needed.

Ladle into bowls and serve.

Notes/Tips

  • Serve with crusty bread, breadsticks or a dinner roll.
  • Make this soup thicker by adding more than 3 cups of diced potatoes. Adjust seasonings as needed.
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with Worcestershire sauce are Instant Pot Crumbly Burgers and Instant Pot French Onion Salisbury Steaks.

Yes! Full-fat coconut milk works well here—just know it’ll add a very subtle coconut flavor. Stir it in at the end just like the evaporated milk.
