Amish Cheeseburger Breakfast Casserole–a savory breakfast casserole with ground beef, pickles, and French bread cubes baked in an egg and milk custard, a cheeseburger twist on the classic morning dish. Bake it in the oven or your slow cooker.

Amish Cheeseburger Breakfast Casserole

This recipe is adapted from Amish 365. The author states, “This Amish Cheeseburger Bake comes from a tome called the ‘Lanc. County Amish Cookbook’, published in 1982 and boasting over seven hundred recipes.” The original recipe seemed that it might be a little bland so I added in some onion, garlic powder, ketchup, mustard and pickles. The end result was a hearty breakfast casserole that had the flavors of a cheeseburger. You can easily prep this casserole up to 24 hours before you’d like to serve it. Just refrigerate and then pop in the oven when you’re ready to bake.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 90/10
  • Onion–yellow, white
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Yellow mustard
  • Ketchup
  • Milk–I used 2%
  • Eggs
  • Dry mustard
  • French bread–or white bread, baguette, stale bread works great for this recipe
  • Dill pickles
  • Cheddar Monterey jack blend–or just cheddar
  • Dried parsley

Steps

Heat oven to 325° F and spray a glass 9×9 inch baking dish with non-stick cooking spray.

Heat a pan over medium high heat and add in the beef. Break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, yellow mustard and ketchup. Turn off stove and set aside.

In a bowl whisk together the milk, eggs and dry mustard. Add in the bread cubes, pickles, cheese, parsley and meat mixture. Stir until combined. Pour the mixture into the prepared pan.

Bake, uncovered, for 1 hour.

Notes/Tips

  • Serve with fresh fruit like berries or melon slices.
  • I used my glass 8×8 inch baking dish.
  • I liked this with some ketchup on top.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 16 oz lean ground beef
  • 1/2 cup chopped onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 Tbsp yellow mustard
  • 1/4 cup ketchup
  • 1 1/2 cups milk
  • 3 eggs
  • 1/2 tsp dry mustard
  • 5 oz French bread, cut into cubes
  • 1/2 cup diced dill pickles
  • 1 cup shredded cheddar Monterey jack blend
  • 1 tsp dried parsley

Instructions

Oven Instructions:

  3. In a bowl whisk together the milk, eggs and dry mustard. Add in the bread cubes, pickles, cheese, parsley and meat mixture. Stir until combined. Pour the mixture into the prepared pan.
  4. Bake, uncovered, for 1 hour. 

Slow Cooker Instructions:

  1. Spray the inside of your slow cooker with nonstick cooking spray.
  2. Brown the beef and onion in a skillet on the stove. Drain off excess grease, then stir in the salt, pepper, garlic powder, mustard, and ketchup.
  3. In a large bowl, whisk together the milk, eggs, and dry mustard. Add the bread cubes, pickles, cheese, parsley, and the cooked beef mixture, then stir until combined.
  4. Pour the mixture into the slow cooker. Cover and cook on low for 4 hours or high for 2-3 hours or until the center is set and the eggs are cooked through. Let sit uncovered for about 10 minutes before scooping and serving.

Notes

To make this as an overnight breakfast casserole, assemble everything in the dish, cover tightly, and refrigerate overnight. Bake in the morning as directed (uncovered), adding 15-20 extra minutes of cook time since it will be starting out cold.

    Reminds me of the Cheeseburger Impossible Pie Recipe from way back but much better!!
    I tried it and it also can be cooked with the microwave in ramekins or on plates for a fast meal. Delicious!
